Why Use RO*TEL® Diced Tomatoes & Green Chiles?
Please note that this post is NOT sponsored by RO*TEL®. I just used their canned diced tomatoes and green chiles in this recipe because they make this casserole a zillion times easier to get on the table. They’re full of flavor, and they make throwing this casserole together incredibly easy.
I typically pick them up at Walmart, but you can also find them at Target and most grocers in the U.S. If you can’t find them or are located outside of the U.S., you can use 12 oz diced tomatoes and add additional seasoning to the casserole to taste.
You can also get them on Amazon:

This looks like a great filler for bell pepper halves!
Hi Christine, GREAT idea! I’m definitely going to give that a try soon!
How many servings or what is size of single serving
Hi Laurie! This recipe makes four servings.
Wish there was still dates at the top of the post!!!
What I wanted to say was Salsa added to the casserole works when you do not have Rotel!
Hi Becky! I removed the dates because people would see an “old” date and think the post was outdated 🙁 I published this one back in February of this year.
Thank you so much for the feedback of salsa as a Rotel sub – that is a GREAT idea! I’ll definitely have to give it a try.
What would you recommend as sides to go with this?
Hi Katie! I find this to be a pretty complete meal. If you wanted to add a small side, you could do a side salad with a keto salad dressing from this list.
We found this to be very good. I did make some changes to the recipe though. I added onions with the ground beef while cooking and added softened cream cheese to the sour cream mix to make it creamier. I served it with cilantro lime cauliflower rice.. Will definitely make again.
Hi Lisa, Yum! Your changes sound delicious. Thanks so much for giving my recipe a try and for leaving a review!
What size cans of Rotel do you use..10oz or larger?
Hi Carolyn! I use the 10oz can size.
