Keto Ground Beef and Tomato Casserole
Ingredients
- 1 1/2 cans RO*TEL® Diced Tomatoes & Green Chiles (I use Original, but you can also use Mild or Spicy) drained and divided
- 1 lb 85% lean ground beef
- 1/2 tsp chili powder
- 1 tsp cumin
- 1 tsp garlic powder
- 1/4 tsp salt
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 350 F.
- To a large pan over medium-high heat, add one can of RO*TEL® (drained), ground beef, chili powder, cumin, garlic powder, and salt.
- Cook until beef is no longer pink, breaking up beef and combining mixture as it cooks.
- Remove from heat and add mixture to an 8×8” casserole dish.
- In a small bowl, combine remaining ½-can of RO*TEL® (drained) and sour cream. Evenly spread mixture over beef mixture, then sprinkle cheddar cheese on top.
- Place casserole dish in the oven and bake for 7-10 minutes, until cheese is completely melted.
- Serve and season with additional salt to taste.

What would you recommend as sides to go with this?
Hi Katie! I find this to be a pretty complete meal. If you wanted to add a small side, you could do a side salad with a keto salad dressing from this list.
We found this to be very good. I did make some changes to the recipe though. I added onions with the ground beef while cooking and added softened cream cheese to the sour cream mix to make it creamier. I served it with cilantro lime cauliflower rice.. Will definitely make again.

What size cans of Rotel do you use..10oz or larger?

This recipe for Keto Ground Beef and Tomato Casserole is good for the times you want to just quickly put together a meal without a lot of fuss. I prefer using the mild ROTEL Diced Tomatoes.
I need Keto friendly meals that my children will eat and also will work for me on Keto. I tried your cheesy Keto ground beef casserole last night and am happy with the results. I used the mild version of Rotel diced tomatoes & green chilies because my kids don’t like a lot of spice. I served a side salad of greens with the Keto ranch dressing and gave the kids some carrot sticks and broccoli to dip in the ranch dressing. I am loving your Keto casserole recipes!
