But I assure you, this Keto Cauliflower Cheese Casserole is INCREDIBLE! Cheddary, creamy mashed cauliflower makes for a keto recipe you’ll bake over and over again!

How to Make This Cauliflower Cheese Casserole Keto Recipe {Quick Overview}

Microwave and drain cauliflower. Then transfer it to a food processor or blender. Add heavy whipping cream and butter…
and pulse until smooth. Then add remaining ingredients except for 1/4 cup of the cheddar cheese…
and stir until smooth. Then, transfer mixture to a baking dish and cover with remaining cheddar cheese.
TIP: The baking dish pictured below is 7.5″ x 10.5.” You can use a similar rectangular size, or a square dish like 8″ x 8″ or 9″ x 9″.
Bake for 10 minutes or until cheese is melted.

Cauliflower Cheese Casserole {Keto}
Ingredients
- 1 head cauliflower about 2 1/2 pounds
- 2 tbsp butter
- 1/2 cup heavy whipping cream
- 1/4 sour cream
- 3/4 cup shredded Cheddar cheese divided
- 2 tbsp chopped parsley
- 1/2 tsp salt
- 1/4 tsp pepper
- 3 slices bacon cooked and crumbled
Instructions
- Preheat oven to 400 F.
- Cut cauliflower into florets. Place in a large bowl with 1" water. Microwave cauliflower on HIGH for 14 minutes or until cauliflower is tender. Drain water from cauliflower.
- Transfer mixture to the container of a food processor or blender. Add butter and heavy whipping cream. Pulse until mixture is smooth.
- Stir in sour cream, 1/2 cup cheddar cheese, parsley, salt, pepper, and bacon.
- Transfer mixture to a baking dish (see recipe notes for size recommendations). Sprinkle top with remaining 1/4 cup cheddar cheese.
- Bake at 400 F for 10 minutes or until cheese is melted.
