Ingredients

  • 1 head cauliflower about 2 1/2 pounds
  • 2 tbsp butter
  • 1/2 cup heavy whipping cream
  • 1/4 sour cream
  • 3/4 cup shredded Cheddar cheese divided
  • 2 tbsp chopped parsley
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 3 slices bacon cooked and crumbled

Instructions

  • Preheat oven to 400 F.
  • Cut cauliflower into florets. Place in a large bowl with 1" water. Microwave cauliflower on HIGH for 14 minutes or until cauliflower is tender. Drain water from cauliflower.
  • Transfer mixture to the container of a food processor or blender. Add butter and heavy whipping cream. Pulse until mixture is smooth.
  • Stir in sour cream, 1/2 cup cheddar cheese, parsley, salt, pepper, and bacon.
  • Transfer mixture to a baking dish (see recipe notes for size recommendations). Sprinkle top with remaining 1/4 cup cheddar cheese.
  • Bake at 400 F for 10 minutes or until cheese is melted.
