Can we all agree that fathead dough is the best thing ever? There are so many variations on the basic ingredients (coconut or almond flour, mozzarella cheese, cream cheese, and eggs) and it can be used to make just about any bread-based food. Fathead pizza crust, donuts, bagels, biscuits… the list goes on!
(If you’ve never heard of fathead dough before, it originated in the popular pro-fat documentary, Fat Head.)
Thanks to fathead dough, today I am bringing you Keto Garlic Flatbread! With a few tweaks to the recipe and all the garlic bread additions, I’ve made garlic flatbread that you can pair with a keto-friendly “pasta” dish, dip in a keto-friendly sauce, or just enjoy it on its own. It makes a great side or appetizer and can be made with ingredients you likely already have in your kitchen.
Ingredients Needed to Make Keto Garlic Flatbread
Ingredient quantities are located in the recipe card at the end of the post.
Terrasoul Coconut Flour: Coconut flour is also frequently used in keto baked goods. This is a high-quality brand that I use in all of my recipes that call for coconut flour.
Swerve Confectioners Sugar Replacement: If you’re looking for a sugar substitute, you’ll love Swerve Confectioners! It uses (natural) sugar alcohols which have zero effect on blood sugar, meaning you can subtract them from the net carb count. (That gives Swerve zero net carbs.) It also measures just like sugar, so there isn’t any guessing about how much to use. I purchase the 48 oz. bags because they are convenient and a much better price per ounce than the 12 oz. bags.
Kitzini Silicone Baking Mats: Silicone baking mats are my baking BFF — they make clean-up a breeze when baking! This is optional but highly recommended. (You can also use parchment paper.)
Other ingredients:
- Mozzarella cheese (shredded, low-moisture part-skim — this type will give the best results, and it’s also the standard kind of shredded mozzarella cheese you buy at the store)
- Cream cheese
- Large eggs
- Heavy whipping cream
- Butter
- Baking powder
- Salt
- Parmesan cheese
- Garlic powder
- Onion powder
How to Make Keto Garlic Flatbread
This is just a quick overview of how to make the flatbread. For the recipe in detail, scroll to the recipe card at the end of the post.
Preheat oven line a baking sheet with parchment paper or a non-stick silicone baking mat. TIP: I highly recommend using a silicone baking mat. Here is the silicone baking mat that I use.
Combine coconut flour, Swerve Confectioners, baking powder, and salt in a small bowl and set aside.
In a microwave-safe bowl, combine mozzarella cheese and cream cheese. Microwave for 45 seconds on high, then remove and stir. The mixture will not be fully combined at this point, but make sure to spread out the cream cheese as much as possible.
Return cheese and cream cheese to the microwave for another 45 seconds. Remove and stir again, fully combining the mixture as much as possible.
In another bowl, combine the eggs, whipping cream, and flour mixture. Then add the cream cheese/cheese mixture and knead with your hands until a dough forms. TIP: If the dough starts to stiffen, microwave again for a few seconds.
Place it on your lined baking sheet and roll it out into a rectangle, then bake. Remove from oven and set aside so you can make your toppings!
Combine melted butter, garlic powder, onion powder, and salt. Brush on top of the bread, coating the entire surface, then sprinkle on Parmesan cheese. Bake again.
Your Keto Garlic Flatbread is ready! 🙂 Slice and enjoy. Optionally, top with shredded cheese and place under the broiler until the cheese is melted.

- 3 tbsp butter melted
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/2 cup grated Parmesan cheese

- Preheat oven to 425 F and line a baking sheet with parchment paper or a non-stick silicone baking mat.
- Combine coconut flour, Swerve Confectioners, baking powder, and salt in a small bowl and set aside.
- In a microwave-safe bowl, combine mozzarella cheese and cream cheese. Microwave for 45 seconds on high, then remove and stir. The mixture will not be fully combined at this point, but make sure to spread out the cream cheese as much as possible.
- Return cheese and cream cheese to the microwave for another 45 seconds. Remove and stir again, fully combining the mixture.
- In a large bowl, combine the eggs, whipping cream, and flour mixture. Then add the cream cheese/cheese mixture and knead with your hands until a dough forms. (If the dough starts to stiffen, microwave again for a few seconds.)
- Place it on your lined baking sheet and roll it out into a rectangle, 1/3” thick.
- Bake for 7 minutes. Remove from oven and set aside.
Topping Instructions
- Combine melted butter, garlic powder, onion powder, and salt. Brush on top of the bread, coating the entire surface.
- Evenly sprinkle parmesan cheese on top.
- Return to oven for another 4-5 minutes, until golden brown.
- Cool for a few minutes before cutting into 8 pieces. Optionally, top with shredded cheese and place under the broiler until the cheese is melted.

does it have a coconut taste.. i usually bake with almond flour. not a fan of coconut at all. could you use almond flour instead?
Hi Joanne! I don’t think it does, but I know some people are extra sensitive to the taste of coconut. If that’s you, it’s probably safer to do the almond flour version. To do that version, replace the coconut flour with 3/4 cup almond flour, and reduce the eggs down to one. Everything else stays the same. Enjoy!

Hi Sam! The topping is to make it into cheesy garlic bread. You can omit the cheese if you’d like and add garlic on top to taste. Enjoy!

Keto garlic bread saved the day. It was too cold to play outside so I had my children help me make the garlic bread. We sprinkled extra cheese on it at the end and set it under the broiler until the cheese melted. Absolutely wonderful. We all loved it including my husband. It is a great Keto friendly snack that everyone enjoyed.
