While I do not recommend The Cabbage Soup Diet, I will say that trying it once when I was younger made me realize that cabbage soup is actually pretty tasty! This cabbage soup – made heartier with beef – is wonderfully flavorful and very easy to make in less than 60 minutes.

How to Make Low Carb Hamburger Cabbage Soup {Quick Overview}

To a large pot on medium-low heat, add olive oil. When olive oil is heated, add chopped red onion and saute until the onion just begins to turn translucent. (Photo 1)
Add garlic and red pepper. Cook until onions are translucent and the garlic is starting to brown. (Photo 2)
Add carrot and crumbled ground beef, stir mixture thoroughly, and turn heat up to medium. (Photo 3)
Cook, stirring occasionally, until the beef is mostly cooked through.
TIP: Because this is a keto recipe, you don’t need to drain the oil off the cooked beef. However, if you would prefer to do so, you can drain some or all of it before moving on to the next step.

Add diced tomatoes, paprika, and beef stock, and again thoroughly stir the mixture. Bring it to a low boil.

- 1/2 large red onion chopped
- 1 medium red bell pepper chopped

- 2 lbs 80/20 ground beef
- 3/4 medium green cabbage

- 14.5 oz can diced tomatoes
