Chicken noodle soup is probably a dish you thought you had to give up while on keto, but I’m happy to report that you do not need to give it up! This nourishing bowl of low carb chicken noodle soup uses keto-friendly noodles for a dish that looks and tastes like the real thing.

- Butter
- Red onion
- Garlic
- Carrot
- Celery
- Boneless, skinless chicken breast
- Chicken stock
- Bay leaves
- Salt
- Pepper
- Oregano
- Thyme

How to Make Keto Chicken Noodle Soup {Quick Overview}
This is just a quick overview of some of the steps involved in making the low carb chicken noodle soup. For the recipe in detail, including exact measurements used at each step, scroll to the recipe card at the end of the post.
To a medium-sized pot or Dutch oven on medium-low heat, add butter. When butter is heated, add chopped red onion and saute until beginning to turn translucent. Add garlic and cook until onions are translucent and the garlic is starting to brown. (Photo 1)
Add carrot and celery (Photo 2) then chicken breast and 1 cup of the chicken stock. Stir, turn heat up to medium, and cover. Cook, stirring occasionally, for five minutes or until the chicken is mostly cooked through. (Photo 3)
Add remaining chicken stock, bay leaves, salt, pepper, oregano, and thyme. Bring to a simmer and simmer uncovered for 35 minutes. (Photo 4)
Add prepared shirataki noodles (see below for prep instructions!), stir, and cook for an additional three minutes before turning off heat. (Photo 5)
Remove bay leaves and serve.
How to Make Shirataki Noodles (The Best Way!)
Shirataki noodles are great substitutes for noodles on the keto diet, but straight out of the package, they’re a bit unpleasant. They have a strong odor (this comes from the glucomannan flour they’re made from, which is sourced from the root of the konjac plant), but a few minutes of little prep work, you can almost entirely eliminate the odor. This leaves you with delicious, keto-friendly noodles!
First, rinse your noodles thoroughly. Really, really rinse them! (Photo 1)
Next, add the rinsed noodles to a pan of fresh water. Bring it to a boil and boil for three minutes. Drain water.
Then, pan fry the noodles in a dry, hot pan over medium heat for approximately five minutes. Stir constantly and use a spatula to separate noodle strands. (Photo 2)

Keto Chicken Noodle Soup
Ingredients
