- Olive oil
- Ground turkey (85/15)
- Garlic
- Almond flour
- Almond milk (unsweetened)
- Chicken broth
- Shredded Parmesan cheese
- Swiss cheese
- Frozen, chopped spinach, thawed
- Green onions
- Fresh lemon zest
- Salt and pepper
- Optional: red pepper flakes
How to Make Low Carb Turkey Soup (Florentine Soup) {Quick Overview}

Cook ground turkey in olive oil over medium-high heat until cooked through. Then, add garlic and cook an additional 1-2 minutes.
Sprinkle almond flour evenly over mixture, then cook while stirring constantly for 1-2 minutes.
Next, add almond milk and chicken broth to the skillet.
Stir to combine, then add 1/2 cup Parmesan cheese and all of the Swiss cheese to the skillet. Stir to combine as cheese melts.
Then add the remaining ingredients to the skillet and again stir to combine.
Your soup is ready to serve! Divide into four equal portions and top each bowl with additional salt and pepper plus 1 tbsp shredded Parmesan cheese.

Keto Turkey Soup: Turkey Florentine
Ingredients
- 2 tbsp olive oil
- 1 lb ground turkey (85/15)
- 3 cloves garlic minced
- 1/4 cup almond flour
- 3/4 cup unsweetened almond milk
- 1 1/2 cups chicken broth
- 3/4 cup shredded Parmesan cheese divided
- 1/2 cup diced Swiss cheese about 2 oz
- 10 oz frozen, chopped spinach thawed
- 1/4 cup chopped green onions
- 2 tsp fresh lemon zest
- 1 tsp salt
- 1/2 tsp pepper
- 1/4 tsp red pepper flakes optional
Instructions
- Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add ground turkey and cook for 5-6 minutes or until turkey is cooked through, stirring to break up clumps.
- Add garlic and cook an extra 1-2 minutes, stirring occasionally.
- Sprinkle turkey meat evenly with almond flour. Cook, stirring constantly, for 1-2 minutes.
- Add almond milk and chicken broth to skillet. Stir to combine.
- Then, add 1/2 cup Parmesan cheese and Swiss cheese to skillet. Stir as cheese melts, to combine.
- Add squeezed spinach, green onions, lemon zest, salt, pepper, and red pepper flakes (if using). Stir to combine.
- Transfer soup into serving bowls. Season with additional salt and pepper if desired, then top each serving with 1 tbsp Parmesan cheese.
