Ingredients
- 1 cup unsweetened almond milk
- 2 tbsp unsweetened peanut butter
- 1 tbsp MCT oil
- 1 tsp vanilla extract
- 3 tbsp Swerve Confectioners or other keto-friendly sweetener to taste
- 1/2 cup ice cubes
- 1 tsp chopped peanuts
- 1 tsp chopped keto-friendly chocolate
- Optional thickener: 1/8 tsp xanthan gum
- Optional flavoring: 1 tbsp Dutch-processed cocoa powder
- Optional topping: keto whipped cream
Instructions
- Blend all ingredients except ice cubes until smooth.
- Add ice cubes, then blend for 1 minute or until ice cubes have fully blended.
- Pour smoothie into a glass and top with 1 tsp chopped peanuts and 1 tsp chopped keto-friendly chocolate.

I love this Keto peanut butter smoothie! This makes a very refreshing drink to reward myself after exercising. I am very fond of peanut butter so this is especially good to me. I did add 1/4 teaspoon of xanthan gum to thicken it up. Great recipe and super quick to make.
