Add all smoothie ingredients to blender except ice and blend until smooth.
⭐ TIP: Want a thicker smoothie without adding more ice? Add 1/8 tsp xanthan gum at this step! It’s net carb-free and will increase the thickness of the smoothie. You can double it to 1/4 tsp if want it a little thicker, but no more than that – too much xanthan gum and your smoothie will end up kind of goopy (not a great texture!).

Ingredients

- 1 cup unsweetened almond milk
- 2 tbsp unsweetened peanut butter
- 1 tbsp MCT oil
- 1 tsp vanilla extract
- 3 tbsp Swerve Confectioners or other keto-friendly sweetener to taste
- 1/2 cup ice cubes
Topping Ingredients
- 1 tsp chopped peanuts
- 1 tsp chopped keto-friendly chocolate
Instructions
- Add all Smoothie Ingredients except for ice cubes to a blender. Blend until smooth.
- Add ice cubes to mixture, then blend for 1 minute or until ice cubes are well incorporated.
- Pour smoothie into a glass and top with Topping Ingredients.

I love this Keto peanut butter smoothie! This makes a very refreshing drink to reward myself after exercising. I am very fond of peanut butter so this is especially good to me. I did add 1/4 teaspoon of xanthan gum to thicken it up. Great recipe and super quick to make.
