How to Make Keto Chili {Quick Overview}

Saute onion and garlic in olive oil. (Photo 1)
Add ground beef, stir, and turn heat up to medium. Cook until the beef is cooked through. (Photo 2)
Add chili seasoning and chopped bell pepper. Stir to thoroughly incorporate the chili seasoning into the beef. (Photo 3)
TIP: The bell pepper is meant to be a bean substitute, so feel free to chop it small. I chop mine a little larger (personal preference), but do what appeals to you most!
Add diced tomatoes, tomato paste, and beef stock. Bring the mixture to a low boil. (Photo 4)

Keto Chili
Ingredients
- 1 tbsp olive oil
- 1/2 large red onion chopped
- 2 cloves garlic diced
- 2 lbs 80/20 ground beef
- 1 serving Homemade Chili Seasoning Mix
- 1 medium red bell pepper chopped
- 28 oz can diced tomatoes
- 3 oz tomato paste
- 1 1/2 cups beef stock
Instructions
- To a saute pan on medium-low heat, add olive oil. When olive oil is heated, add chopped red onion and saute until beginning to turn translucent. Add garlic and cook until onions are translucent and the garlic is starting to brown.
- Add ground beef, stir mixture, and turn heat up to medium. Cook, stirring occasionally, until the beef is cooked through.
- Add chili seasoning and chopped bell pepper. Stir to thoroughly incorporate the chili seasoning into the beef.
- Add diced tomatoes, tomato paste, and beef stock, and again thoroughly stir the mixture. Bring it to a low boil.
- Then, reduce the heat to a gentle simmer. Simmer the chili, uncovered, for 20-25 minutes, stirring occasionally.
- The chili can be served as-is or topped with cheese and/or sour cream.
Notes
- Make sure to use my Homemade Chili Seasoning recipe for this chili. You will use 1 serving of the seasoning (which is half of the recipe). If you don’t like your chili spicy, reduce or omit the cayenne pepper.
- Although it’s best served as-is, if you would like to further lower the carbs in this chili, you can reduce the tomatoes to 15 oz. This change will bring the net carbs per serving down to 5.4g.
