I kind of have a love affair with fat bombs going on. I mean, what’s not to love? They’re small morsels of keto deliciousness and you can make them in pretty much any flavor.
For this fat bomb recipe (which I actually photographed 9+ months ago and am finally posting… better late than never, right?), I decided to go with a blueberry cream pie flavor. YUM, right?! (And yes, you can definitely eat a bit of fruit on the keto diet as long as you see it as more of a “flavoring” and not the main focus of a dish.)
Ingredients You’ll Need for Keto Blueberry Cream Pie Fat Bombs
Soft goat cheese
grab this at the store! (I buy mine at Trader Joe’s)
Fresh blueberries

Anthony’s Almond Flour
Simply Organic Pure Vanilla Extract
A nice vanilla extract with a good flavor.
Nature’s Eats Pecans
Super buttery and fresh at a great price!
NOW Better Organic Stevia Sweetener
A great keto-friendly sweetener.
Anthony’s Shredded Coconut
This stuff is naturally sweet and super fresh!

Why Goat Cheese in Fat Bombs?
I feel like I don’t see goat cheese used enough in the keto diet. Soft goat cheese, in particular, is nearly void of carbs completely and has a wonderful tangy flavor. I really love the flavor it lends to these fat bombs — it definitely adds that slight tang that makes regular blueberry cream pie so special. (Regular blueberry cream pie uses sour cream mixed with cream cheese. For this recipe, I just made it easier by using goat cheese.)

Just add your ingredients to a food processor, process until well combined, then roll the batter into 30 small fat bombs.
Next, pour the coconut flakes into a small bowl and lightly roll each fat bomb in the coconut flakes. That’s it. Pair your new yummy fat bombs with a keto coffee and you’re ready to go!
Note: You will need to store these in the fridge because of the goat cheese.

Ingredients

- 1/2 cup fresh blueberries
- 1 cup almond flour
- 1 tsp vanilla extract
- 1/2 cup pecans
- 1/2 tsp stevia
- 1/4 cup unsweetened shredded coconut to roll fat bombs in
Instructions
- Process all ingredients in a food processor until well combined.
- Roll into 30 small fat bombs.
- Pour coconut flakes into a small bowl and lightly roll each fat bomb in the shredded coconut.

How many fat Bombs can you eat in a day?
Hi Maritza! You’ll want to be mindful of the carb count in fat bombs (they all usually have at least 1g net carbs) so you don’t go over your carb limit (which will knock you out of ketosis). They’re a bit of a dessert too, so I’d say no more than four or five a day.
They r horrible when made with goat cheese 🤮
Can these be made with cream cheese instead of goat cheese? Great recipe!
Hi Kim! Yes, you can use cream cheese. I suggest adding 1/2 tsp lemon juice if you use cream cheese to give it a bit of that “tang” that goat cheese has naturally.
I made these with goat cheese and they were absolutely horrible. I would recommend cream cheese 100%.

Can you substitute coconut flour? I’m allergic to almonds
Hi Maryanne! Yes, you can. Coconut flour tends to really suck in moisture so I would try 3/4 cup coconut flour and see if you like the texture. If they’re a bit dry, you can add more goat cheese or add coconut oil.

Feta is really salty so I’m not sure if the flavor would be a good match. I would enjoy the feta on its own and pick up goat cheese next time. 🙂 Or, you could use cream cheese instead.

Do you think it would work to use blackberries or strawberries?
Hi Kelly! Blackberries and strawberries are a bit higher in water content than blueberries (strawberries more so than blackberries) so they may end up a bit stickier and harder to form into balls. You could definitely give it a shot though; worst case scenario, you’d just have to eat the mixture with a spoon. Not an entirely bad thing! 🙂
I take it you used powdered stevia… all I have on hand is liquid stevia. How much would you suggest using of the liquid?
Hi Karen! Yes, I did use powdered stevia. To substitute liquid stevia, use 16 drops.

Oh no! I’m sorry to hear that. I’ve never had it make a smoothie texture when making them. Stick the mixture in a fridge for at least an hour — it should firm up.
Are these baked? Your photo looks like a baked item.. just checking.
Mine turned out too creamy..a little firmer as i chill them. But not enough to roll them. Pretty tasty though!
Hi Deb! I don’t bake mine. I’m so sorry yours came out too creamy — you’re not the first person who has mentioned this and I’m not quite sure what is causing the discrepancy. The only thing I can think of is perhaps some soft goat cheese logs are softer than others? I purchase mine from Trader Joe’s, and while it’s soft goat cheese, it’s fairly firm (some may even describe it as slightly dry).
I cannot get past the smell of goat cheese, it’s just horrendous to me. Can I substitue something else in it’s place?
Hi Lisa! That’s no problem; you can use cream cheese instead. You will lose the natural tanginess of the goat cheese, so I suggest adding 1/2 tsp lemon juice to compensate.

I love this idea, I cant eat dairy products, is there something that I can replace the goat cheese, like coconut oil?
Hi Camila! Coconut oil won’t work (it’s the wrong texture), but a plant-based cream cheese will definitely work as a substitute! If you go that route, also add 1/2 tsp lemon juice to give the extra “tang” that you miss from not using goat cheese.
