Keto Blueberry Cream Pie Fat Bombs

These oh-so-yummy Keto Blueberry Cream Pie Fat Bombs will give you the amazing flavor of blueberry cream pie without kicking you out of ketosis!

I kind of have a love affair with fat bombs going on. I mean, what’s not to love? They’re small morsels of keto deliciousness and you can make them in pretty much any flavor.

For this fat bomb recipe (which I actually photographed 9+ months ago and am finally posting… better late than never, right?), I decided to go with a blueberry cream pie flavor. YUM, right?! (And yes, you can definitely eat a bit of fruit on the keto diet as long as you see it as more of a “flavoring” and not the main focus of a dish.)

Ingredients You’ll Need for Keto Blueberry Cream Pie Fat Bombs

Soft goat cheese

grab this at the store! (I buy mine at Trader Joe’s)

Fresh blueberries

Anthony’s Almond Flour

A quality almond flour.

Simply Organic Pure Vanilla Extract

A nice vanilla extract with a good flavor.

Nature’s Eats Pecans

Super buttery and fresh at a great price!

NOW Better Organic Stevia Sweetener

A great keto-friendly sweetener.

Anthony’s Shredded Coconut

This stuff is naturally sweet and super fresh!

Why Goat Cheese in Fat Bombs?

I feel like I don’t see goat cheese used enough in the keto diet. Soft goat cheese, in particular, is nearly void of carbs completely and has a wonderful tangy flavor. I really love the flavor it lends to these fat bombs — it definitely adds that slight tang that makes regular blueberry cream pie so special. (Regular blueberry cream pie uses sour cream mixed with cream cheese. For this recipe, I just made it easier by using goat cheese.)

Keto Blueberry Cream Pie Fat Bombs are SO easy to make!

Just add your ingredients to a food processor, process until well combined, then roll the batter into 30 small fat bombs.

Next, pour the coconut flakes into a small bowl and lightly roll each fat bomb in the coconut flakes. That’s it. Pair your new yummy fat bombs with a keto coffee and you’re ready to go!

Note: You will need to store these in the fridge because of the goat cheese.

Yummy blueberry fat bombs with only 1 gram carbs each!

Instructions
  1. Process all ingredients in a food processor until well combined.
  2. Roll into 30 small fat bombs.

        • Hi Maritza! You’ll want to be mindful of the carb count in fat bombs (they all usually have at least 1g net carbs) so you don’t go over your carb limit (which will knock you out of ketosis). They’re a bit of a dessert too, so I’d say no more than four or five a day.

    • Hi Kim! Yes, you can use cream cheese. I suggest adding 1/2 tsp lemon juice if you use cream cheese to give it a bit of that “tang” that goat cheese has naturally.

    • Hi Maryanne! Yes, you can. Coconut flour tends to really suck in moisture so I would try 3/4 cup coconut flour and see if you like the texture. If they’re a bit dry, you can add more goat cheese or add coconut oil.

  • Hi! Last time I had goat cheese, I had a negative reaction. Is there something I could substitute the goat cheese with?

    • Hi Melinda,

      Feta is really salty so I’m not sure if the flavor would be a good match. I would enjoy the feta on its own and pick up goat cheese next time. 🙂 Or, you could use cream cheese instead.

    • Hi Kelly! Blackberries and strawberries are a bit higher in water content than blueberries (strawberries more so than blackberries) so they may end up a bit stickier and harder to form into balls. You could definitely give it a shot though; worst case scenario, you’d just have to eat the mixture with a spoon. Not an entirely bad thing! 🙂
