  • Olive oil
  • Frozen cauliflower rice (you are also welcome to use cooked regular rice)
  • Garlic
  • Yellow onion
  • Ground Italian sausage
  • Salt and pepper
  • Italian seasoning
  • Tomato sauce
  • Mozzarella cheese

✨ Choose firm, glossy bell peppers that can stand upright on their own. They’ll hold the filling better and roast evenly without collapsing.

How to Make Italian Sausage Stuffed Peppers with Cauliflower Rice {Quick Overview}

This is just a quick overview of some of the steps involved in making the stuffed peppers. For the recipe in detail, including exact measurements used at each step, scroll to the recipe card at the end of the post.

To start, prepare bell peppers by roasting them in a baking dish. Note that the filling will be fully cooked when you add it to the peppers – the final baking step with the filling in the peppers is really just to bring everything to a consistent temperature – so make sure you roast them to your desired softness.

✨ I used red bell peppers, but feel free to use any color of bell pepper you’d like. Note that red bell peppers are the sweetest when roasted, followed by orange, yellow, and then green. Some people like their stuffed roasted peppers sweet; others don’t, so do what makes you happy! 🙂

While the peppers are roasting, you can start on the filling.

Cook, cool, and drain the frozen cauliflower rice.

✨ Not a fan of cauliflower rice? You can use cooked regular rice at this step.

Photo 1: Sauté the garlic and onion in olive oil until they become fragrant, then stir in the cauliflower rice.

Photo 2: Add the ground Italian sausage along with the salt, pepper, and Italian seasoning. Cook, stirring occasionally, until the sausage is nicely browned and fragrant.

Photo 3: Remove the skillet from the heat, then stir in the tomato sauce and half of the mozzarella cheese until everything is well combined and melted together.

Photo 4: When your peppers are ready, remove them from the oven.

Photo 6: Top each pepper with mozzarella cheese. Return to the oven until the peppers and filling are at your desired temperature and the cheese has fully melted.

✨ For that special extra-gooey melted cheese look, shred your mozzarella cheese by hand. Pre-shredded cheese contains anti-caking agents that make it difficult to melt.

Ingredients

  • 3 large red bell peppers destemmed, deseeded, and membrane removed
  • 1 tbsp olive oil plus extra for baking
  • 1 cup cauliflower rice cooked, cooled, and drained (or regular cooked rice)
  • 2 cloves garlic minced
  • 1 small yellow onion finely chopped
  • 1 lb ground Italian sausage
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp Italian seasoning
  • 8 oz can tomato sauce
  • 1 1/2 cups shredded Mozzarella cheese divided

Instructions

  • Preheat oven to 375 F.
  • Lightly rub the inside and outside of the peppers with olive oil and place them upside down in a baking dish or on a sheet pan.
  • Roast for 20-25 minutes, depending on how soft you like your stuffed peppers. (These should be removed from the oven and set aside when done, but move onto the filling steps while they’re roasting.)
  • Saute the garlic and onion in olive oil until beginning to turn fragrant, then add the cauliflower rice. Mix and cook until any excess moisture is removed from the cauliflower rice.
  • Add Italian sausage, salt, pepper, and Italian seasoning to skillet, mix, and saute until the sausage is browned.
  • Remove skillet from heat and mix in tomato sauce and 3/4 cup Mozzarella cheese.
  • Flip the roasted peppers over and stuff with the stuffing mixture. Sprinkle tops with remaining 3/4 cup Mozzarella cheese.
  • Return to the oven and bake for 15-20 minutes until cheese has melted and the stuffing is fully heated.
