Ingredients Needed for this Keto Piña Colada Green Smoothie
Ingredient quantities for this keto smoothie are located in the recipe card at the end of the post.
- Unsweetened vanilla coconut milk
- Baby spinach or cilantro – see the “Spinach Version or Cilantro Version?” section below to help you decide
- Frozen avocado chunks or mashed avocado – frozen avocado chunks are very convenient and will give you a nicely chilled smoothie!
- Unrefined/virgin coconut oil – by using unrefined or “virgin” coconut oil, you will add more coconut flavor
- Capella Pina Colada Drops – this is what gives the smoothie a piña colada flavor without the carbs! You can also use them in my Piña Colada Keto Fat Bombs.
- Swerve Confectioners
- Optional topping: unsweetened coconut chips
How to Make a Keto Piña Colada Green Smoothie
This is just a quick overview of how to make this low carb piña colada smoothie. For the recipe in detail, scroll to the recipe card at the end of the post.
Add ingredients to a blender except for the melted coconut oil and blend until smooth.
Then, slowly drizzle in the melted (but not hot) coconut oil with the blender on the lowest possible setting, as if you were making a vinaigrette. It’s very important that your blender is on the lowest possible speed so the smoothie doesn’t fly out of the blender! By blending in the coconut oil this way, it will incorporate better and result in fewer “coconut oil bits.”
TIP: If you’re wondering if you should make the spinach version or the cilantro version, check out the next section.
Then pour into a glass and enjoy!
If desired, top with unsweetened coconut chips. (The brand I recommend contains 2g net carbs per 3 tbsp.)
Spinach Version or Cilantro Version?
Baby spinach (emphasis on baby; mature spinach has a stronger flavor) is the easiest green to add to green smoothies because the flavor is nearly undetectable.
However, it’s important to rotate your green smoothie greens sometimes so you’re not always consuming the exact same nutrients (I go into this in detail in The 7-Day Keto Green Smoothie Cleanse). You can use a variety of other greens like romaine lettuce, butter lettuce, baby kale, swiss chard, cilantro, and more.
I admit that rotating your greens is a bit easier when consuming non-keto green smoothies that can be loaded with fruit (chugging down some swiss chard is pretty easy when paired with a bunch of pineapple!), so it takes a bit more creativity in the kitchen to come up with keto green smoothies that contain greens other than baby spinach. Not to worry though; it can be done!
That’s why I was super excited to invent the cilantro version of this smoothie. As long as you’re not one of the people who taste soap when they eat cilantro, the piña colada flavors of this smoothie pair beautifully with cilantro.
In short:
- If cilantro is a flavor you enjoy, I highly recommend trying both versions.
- If cilantro isn’t your thing, stick to the baby spinach version.
