How to Make Keto Meatballs {Quick Overview}

In a large mixing bowl, combine all meatballs ingredients except garlic and olive oil.

Form meatballs to 1 1/2” in size. Place on a plate and set aside.

Into a large skillet over low heat, add olive oil. Once heated, add minced garlic and saute until fragrant.
Add meatballs, increase heat to medium, and cook them until they are browned and cooked through.

⭐ TIPS:

  • Work in batches at this step if necessary.
  • Food safety first! To make sure your meatballs are fully cooked, a meat thermometer inserted into the middle should read at least 165 F.

Add marinara sauce to skillet.

⭐ TIP: If your skillet isn’t large enough, transfer meatballs to a pot before adding marinara sauce. (Mine wasn’t – the skillet shown below is for photo purposes only. I transferred everything to my Dutch oven!)

Reduce heat to low and cook for 20 minutes.

Ingredients

Meatballs

  • 2 lb 80/20 ground beef
  • 2 large eggs beaten
  • 1/2 cup shredded Parmesan cheese
  • 1 tbsp Italian seasoning
  • 1/2 tsp pepper
  • 1/2 tsp salt
  • 1/4 cup finely crushed pork rinds
  • 2 cloves garlic minced
  • 1 tbsp olive oil

Sauce

  • 1 24-oz jar sugar-free marinara sauce like Rao’s

  • In a large mixing bowl, combine all meatballs ingredients except garlic and olive oil.
