Tips and Tricks for Making Keto Meatloaf
Making a meatloaf might seem straightforward, but here are a few pointers to ensure it turns out perfect every time:
- Make sure your meatloaf is of even thickness: When shaping your meatloaf, make the thickness as consistent as possible to ensure it is baked evenly throughout.
- Don’t skip the eggs: They provide much-needed moisture to the meatloaf.
- Use a meat thermometer: This ensures your meatloaf is fully cooked and safe to eat, without drying it out.
- Let it rest: Give your meatloaf a breather after it comes out of the oven. It helps the juices redistribute, ensuring moist, flavorful slices.
Why is My Meatloaf Pink in Some Spots?
The color isn’t always a reliable indicator of whether or not your meatloaf is fully cooked. Sometimes certain ingredients, like vegetables or cured meats, can react with the meat’s myoglobin (that’s a protein in muscle tissue), causing it to retain a pink color even when it’s well-cooked.
To make sure your meatloaf is safe to eat, use a meat thermometer to ensure the internal temperature is at least 165 F throughout the loaf. That way, you know it’s safe to eat, even if parts of it look a little pink.
