Meatloaf isn’t the highest-carb recipe out there, but a few simple tweaks can make it even lower in carbs. Plus, Thanks to ketchup without added sugar, this meatloaf recipe even allows for the classic ketchup glaze!

  • Yellow onion
  • Large eggs
  • Pork rinds
  • Garlic powder
  • Sugar-free ketchup – if you have a Kroger near you, I recommend this Kroger No Sugar Added Ketchup
  • Dried thyme
  • Worcestershire sauce 
  • Salt and pepper

How to Make Carb Friendly Meatloaf {Quick Overview}

Preheat oven to the temperature on the recipe card (located at the end of the post), then combine all ingredients in a large bowl.

🧾 INGREDIENT NOTE: This recipe uses finely ground pork rinds as a breadcrumbs substitute. If you’re okay with the ingredients and any carbs it may add, you’re welcome to use storebought or homemade keto bread ground into breadcrumbs for an even more authentic taste and texture!

Into a rimmed baking pan lined with parchment paper, place your 8″ x 4″ shaped meatloaf.

Bake!

Remove meatloaf from oven, brush on topping, and return to the oven to finish baking.

Making a meatloaf might seem straightforward, but here are a few pointers to ensure it turns out perfect every time:

  • Make sure your meatloaf is of even thickness: When shaping your meatloaf, make the thickness as consistent as possible to ensure it is baked evenly throughout.
  • Don’t skip the eggs: They provide much-needed moisture to the meatloaf.
  • Use a meat thermometer: This ensures your meatloaf is fully cooked and safe to eat, without drying it out.
  • Let it rest: Give your meatloaf a breather after it comes out of the oven. It helps the juices redistribute, ensuring moist, flavorful slices.

Why is My Meatloaf Pink in Some Spots?

The color isn’t always a reliable indicator of whether or not your meatloaf is fully cooked. Sometimes certain ingredients, like vegetables or cured meats, can react with the meat’s myoglobin (that’s a protein in muscle tissue), causing it to retain a pink color even when it’s well-cooked.

To make sure your meatloaf is safe to eat, use a meat thermometer to ensure the internal temperature is at least 165 F throughout the loaf. That way, you know it’s safe to eat, even if parts of it look a little pink.

Ingredients

Meatloaf

  • Non-stick cooking spray
  • 1 tbsp extra-virgin olive oil
  • 1 1/2 lbs ground beef I used 80/20
  • 1/4 cup yellow onion finely chopped
  • 2 large eggs whisked
  • 1/2 cup finely crushed pork rinds
  • 1/2 tsp garlic powder
  • 1 tbsp sugar-free ketchup
  • 1 tsp dried thyme
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste

Topping

  • 1/4 cup sugar-free ketchup
  • Optional: 1-2 tbsp Brown Swerve

Instructions

  • Preheat oven to 350 F.
  • In a large bowl, thoroughly combine all ingredients. Do not overmix.
  • Onto a rimmed baking sheet lined with parchment paper or foil, add meatloaf mixture and form into an 8” x 4” loaf shape of even thickness.
  • Bake for 35 minutes.
  • Remove meatloaf from oven, brush on topping, return to oven and bake for 15-20 minutes, until meat thermometer shows that the internal temperature has reached at least 165 F. If it hasn’t, return to the oven for 5-minute increments.
  • Optionally broil meatloaf for 1 minute for a crispier outside.

Notes

Ground beef with higher fat content (like 80/20 or 70/30) will leak some fat into the pan. That won’t affect the flavor, but if you would prefer it not to happen (or happen less), use leaner ground beef.
