Are there any foods quite as good as melted cheese? It’s a simple pleasure, but it’s one of my favorite things to eat – and it happens to be keto-friendly!

Melted cheese is so versatile – it can be made into chips, used as a keto pizza base, formed into keto taco cups, and, in the case of this recipe, entirely replace traditional corn-based taco shells.

Ingredients Needed to Make This Keto Taco Shells Recipe

  • Shredded Cheddar cheese or a blend that’s suitable for tacos, like Mexican style blend or taco blend (yes, there is only ONE ingredient for this recipe!)

If you have a Kroger near you, I like to use their Mexican style blend.

How to Make Keto Cheese Taco Shells {Quick Overview}

This is just a quick overview of some of the steps involved in making the low carb taco shells. For the recipe in detail, including exact measurements used at each step, scroll to the recipe card at the end of the post.

Preheat oven to 375 F.

Line a baking sheet with parchment paper (or a non-stick silicone baking mat) and divide the cheese mixture into 6 portions of 1/4 cup cheese each, spacing them out evenly on the sheet.

Bake the cheese shells for 6-8 minutes or until the edges begin to brown.

Remove from the oven and let cool for 1-3 minutes, until they are cool enough to handle but not becoming stiff.

Carefully lift the cheese shells off the parchment paper and shape them into taco shells.


How to Shape Keto Taco Shells: Common Method

The most common method of shaping keto cheese shells is to drape them over a wooden spoon, like this:

This method makes narrow shells and only allows you to make one shell at a time.

How to Shape Keto Taco Shells: My Preferred Method

My preferred method is to drape them over the sides of a loaf pan, like this:

I prefer this method for two reasons:

  • First, you can shape two shells on a single loaf pan (four if you squeeze them in really tight!).
  • Second, the base of your cheese shell ends up being wider, allowing you to fill them with more ingredients. Since these shells crisp up quite a bit when they cool, a narrow shell means only a small amount of ingredients will stuff them to the breaking point. And who only wants a small amount of fillings in their keto tacos?! Not me!
