- This recipe is keto-friendly in addition to being low carb. In fact, it’s technically a keto recipe because of the low net carbs per serving, but I’ve labeled it “low carb” because it includes refried beans, an ingredient not typically found in keto recipes.
- It will remind you of taco salad. Unlike my Keto Taco Casserole, a fully baked recipe, this recipe is served with a layer of fresh ingredients over the baked ingredients.

How to Make Low Carb Taco Casserole {Quick Overview}
This is just a quick overview of some of the steps involved in making the keto-friendly taco casserole. For the recipe in detail, including exact measurements used at each step, scroll to the recipe card at the end of the post.
Preheat oven to the time specified on the recipe card at the end of the post.
Cook beef in a large skillet over medium-high heat until cooked through. Add onion (Photo 1) and cook for 3-4 minutes, or until translucent. Add chili powder, oregano, cumin, and garlic powder and combine. Stir in half the cheddar cheese.
Transfer mixture to an 8″ x 8″ casserole dish. (Photo 2) Spread refried beans evenly over meat. (Photo 3) Sprinkle with remaining cheddar cheese. (Photo 4)
Bake for 8 minutes or until cheese is melted.
Top evenly with lettuce, black olives, tomato, and green onions. (Photo 5)

You can eat tacos on the keto diet when you use low carb and keto-friendly ingredients. This means you must use low carb cheese shells and low carb flour tortillas. And you must use a low carb taco seasoning option that uses only low carb seasonings. Also, you must avoid large servings of black beans and refried beans on your tacos.

Low Carb Taco Casserole
Ingredients
- 1 lb 80/20 ground beef
- 1/4 cup diced onions
- 2 tsp chili powder
- 1/2 tsp oregano
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1 cup shredded cheddar cheese divided
- 1 cup canned refried beans
- 1/2 cup shredded lettuce
- 2 tbsp sliced black olives
- 2 tbsp chopped tomato
- 1 tbsp sliced green onions
Instructions
- Preheat oven to 350 F.
- Cook beef in a large skillet over medium-high heat until cooked through. Add onion and cook for 3-4 minutes, or until translucent.
- Add chili powder, oregano, cumin, and garlic powder and combine, then stir in 1/2 cup cheddar cheese.
