- Swerve Brown
- Coconut flour
- Unsweetened natural peanut butter – if you happen to live near a Kroger, I recommend Kroger Natural Creamy Peanut Butter
- Egg
- Vanilla extract
- REESE’S Zero Sugar Miniatures
🧾 INGREDIENT NOTE: I prefer the taste and texture of these cookies with Swerve Confectioners in the cookie itself (along with Swerve Brown), but if you only have Swerve Granular on hand, you can substitute the Swerve Confectioners with Swerve Granular. Don’t substitute the Swerve Brown – it’s necessary for the perfect flavor!

How to Make Low Carb Reese’s Peanut Butter Cup Cookies {Quick Overview}
This is just a quick overview of some of the steps involved in making the low carb peanut butter cup cookies. For the recipe in detail, including exact measurements used at each step, scroll to the recipe card at the end of the post.
Preheat oven and prepare dough per the instructions on the recipe card at the end of the post. (Photo 1)
Roll dough into balls (approximately 1 1/2” x 2”) and roll each ball in Swerve Granular to coat them. (Photo 2)
Onto a cookie sheet, place cookie balls approximately 2” apart. (Photo 3)
Using the bottom of a mini Reese’s cup, press down in the middle of each cookie about 1/4”. (Photos 4 and 5)
⭐ TIP: I prefer to use a wrapped Reese’s cup because I’ve found that they tend to break if unwrapped at this step.
Bake for 10-12 minutes until cookie edges begin to lightly brown. Remove from oven and cool for 5 minutes on cookie sheet, then place cookies on a wire rack to cool for an additional 5 minutes.
Place unwrapped Reese’s cups into each cookie, pushing down slightly further into the cookie than the indent you created previously. (Photo 6)
Cool before serving. The cookies will cool much sooner than the Reese’s cups.
⭐ TIP: When possible, I love to serve these cookies when the Reese’s cups are still slightly soft, but they taste great fully cooled as well!

Keto Reese’s Peanut Butter Cup Cookies
Ingredients
- 1/2 cup Swerve Confectioners or Swerve Granular (see notes)
- 2 tbsp Swerve Brown
- 2 tbsp coconut flour
- 3/4 cup unsweetened creamy peanut butter
- 1 large egg
- 1 tsp vanilla extract
- Swerve Granular for coating
- 12 REESE'S Zero Sugar Miniatures
Instructions
- Preheat oven to 350 F.
- In a medium bowl, combine all dry ingredients.
- Add remaining ingredients and mix using an electric or stand mixer until the batter is well combined.
- Roll dough into balls (approximately 1 1/2” x 2”) and roll each ball in Swerve Granular to coat them.
