It’s a little surprising that the simple ingredients in this recipe can come together to make keto bars that taste like cookies, but they bake up beautifully and are such a fun treat!

How to Make Keto Chocolate Chip Peanut Butter Bars {Quick Overview}

In a large bowl, mix all of the ingredients except for the ChocZero milk chocolate chips and optional sea salt.

  • Preheat oven to 350 F.
  • Line a 9×9 or 8×8 baking pan with parchment paper, leaving an overhang so you can easily pull out the cookie bars.
  • Into a large bowl or bowl of a stand mixer, add peanut butter, egg, vanilla extract, and Swerve Brown. Mix with a hand mixer or stand mixer until the mixture is smooth.
  • Fold in the chocolate chips.
  • Add mixture to the prepared baking pan and smooth the top with the back of a spoon or spatula. If desired, sprinkle sea salt to taste on top of the mixture.
  • Bake for 20 minutes.
  • If the bars aren’t yet set in the middle, cover the pan with foil and bake for another 6-12 minutes. The bars will firm as they cool, so be careful not to overbake.
  • After baking, allow the bars to cool, then transfer the bars to a cutting board using the parchment paper. Cut into 16 pieces.

    I like this recipe for Keto Peanut Butter Cookie Bars with Chocolate Chips. The recipe is quick to put together and the cookie bars taste fantastic.
