Are you ready for fluffy Keto Chocolate Chip Cookies that are firm on the outside, soft on the inside, and a mere 1g net carbs per cookie?! I’ve been working hard to make an absolutely delicious keto cookie recipe for you that will satisfy all your chocolate chip cookie cravings.

I’ve tried a lot of keto cookie recipes that leave a bit to be desired, but this recipe comes out fantastic every time thanks to a specific combination of ingredients and a specific (but easy!) process. Follow it to the letter and you won’t be disappointed. I still can’t believe each cookie contains only 1g net carbs. I may or may not have been known to eat these low carb cookies for breakfast a few times… my excuse is that they’re high in fiber. 😉

Ingredients Needed for These Easy Keto Chocolate Chip Cookies

Ingredient quantities are located in the recipe card at the end of the post.

Swerve Confectioners Sugar Replacement: If you’re looking for a sugar substitute, you’ll love Swerve Confectioners! It uses (natural) sugar alcohols which have zero effect on blood sugar, meaning you can subtract them from the net carb count. (That gives Swerve zero net carbs.) It also measures just like sugar, so there isn’t any guessing about how much to use. I purchase the 48 oz. bags because they are convenient and a much better price per ounce than the 12 oz. bags.

Swerve Brown Sugar Replacement: This brown sugar alternative truly has the taste and texture of the real thing!

TerraSouloconut Flour: I’ve tried several coconut flour brands, and TerraSoul is my favorite so far. Their coconut flour is light and fresh.

NOW Glucomannan (Konjac) Powder: This net carb-free powder helps improve the texture of gluten-free baked goods, like these cookies. It helps give Keto Chocolate Chip Cookies a softer, lighter feel.

Additional ingredients:

What Brand of Keto Chocolate Chips Work in These Cookies?

You can use either Lily’s Chocolate Chips or ChocZero Chocolate Chips (use code FORGETSUGARFRIDAY for 10% off your ChocZero order!). Lily’s Chocolate Chips are now stocked at a lot of grocery stores, so check your local grocery baking aisle.

How Do I Store Keto Chocolate Chip Cookies?

Store your cookies in an airtight container for 3-5 days. Alternatively, they will last for up to 2 weeks in the fridge, or 3-4 months in the freezer.

Is the Glucomannan (Konjac) Powder Necessary?

It’s not necessary to make the keto cookies, but it goes a long way in giving these cookies the ideal texture. It helps makes them softer and lighter inside with a nice, crisp outside.

Although it’s not quite the same, you can instead use 1 tsp xanthan gum if you have it on hand.
