Ingredients

  • 4 cups mixed greens (I like to mix spinach, arugula, and romaine lettuce)
  • 1 lb boneless, skinless chicken breasts
  • 1 medium avocado diced
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped almonds
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 375 F. Season the chicken breasts with salt and pepper, then bake them on a baking sheet for 20-25 minutes or until cooked through (internal temperature at least 165 F as measured by a meat thermometer). Let them cool for a few minutes before slicing them into strips.
  • In a large mixing bowl, combine the mixed greens, sliced chicken, diced avocado, halved cherry tomatoes, crumbled feta cheese, and chopped almonds.
  • In a separate small bowl, whisk together the olive oil, lemon juice, salt, and pepper until well combined.
  • Pour the dressing over the salad and toss everything together until the salad is evenly coated with the dressing.
  • Divide the salad among four plates and enjoy!
