How to Make Low Carb Chicken Bacon Ranch Casserole {Quick Overview}
This is just a quick overview of some of the steps involved in making the low carb bacon ranch casserole. For the recipe in detail, including exact measurements used at each step, scroll to the recipe card at the end of the post.
Preheat oven to the temperature on the recipe card (end of post). While the oven is preheating, in a pan over medium heat, fry the quartered bacon until cooked through.
Then, set aside three slices’ worth of quartered bacon (12 pieces) on a clean plate.
To the pan with the remaining bacon (and bacon fat), add the cubed chicken breast. (photo 1)
When the chicken is mostly cooked, add garlic, cauliflower, and broccoli. (photos 2 and 3) Cover and cook for 8 minutes, then drain excess water.
Combine chicken mixture, ranch dressing, 1/2 cup mozzarella cheese, 1/2 cup cheddar cheese and add to a 9×13” casserole dish. Then, top casserole dish with remaining cheese and place in oven. (photo 4)
When the casserole is fully cooked, top it with the bacon you set aside earlier, either as-is or crumbled. (photo 5)

Keto Chicken Bacon Ranch Casserole
Ingredients
- 8 slices bacon cut into quarters, divided
- 4 cups boneless skinless chicken breast cubed
- 3 cloves garlic minced
- 2 1/2 cups cauliflower florets
- 2 1/2 cups broccoli florets
- 1 cup ranch dressing
- 1 1/4 cups shredded cheddar cheese divided
- 3/4 cup shredded mozzarella cheese divided
Instructions
- Preheat oven to 375 F.
- In a pan over medium heat, fry the quartered bacon until cooked through.
- Remove 3 slices’ worth of bacon (12 pieces) from the pan and set them aside on a clean plate.
- To the pan with the remaining bacon (and bacon fat), add the cubed chicken breast.
- When the chicken is mostly cooked, add garlic, cauliflower, and broccoli. Cover and cook for 8 minutes, then drain excess water.
- Combine chicken mixture, ranch dressing, 1/2 cup mozzarella cheese, 1/2 cup cheddar cheese and add to a 9×13” casserole dish.
- Top casserole with remaining cheese.
- Bake for 15 minutes.
- Remove the dish from the oven. Add the bacon you set aside earlier to the top of the casserole (either as-is or crumbled).
- Serve and enjoy!
