Simply Amazing Roasted Cauliflower
Roasted cauliflower is nothing like those (sometimes slightly rubbery--eww) pieces of raw cauliflower you're used to dipping into ranch dressing at family reunions, baby showers, and the like. Roasted cauliflower is naturally sweet, crispy, and caramelized.

Ingredients
- 1 head cauliflower, stems removed and cut into florets
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1/2 teaspoon sea salt
- 1/4 teaspoon ground black pepper
- 1 tablespoon minced garlic (optional)
Instructions
- Preheat oven to 400 degrees.
- On a rimmed baking sheet or in a rectangular baking dish, arrange your cauliflower florets in a single layer. Drizzle the olive oil and lemon juice, and season with salt and pepper (minced garlic optional). Toss well to cover.
- Roast for 20-30 minutes, turning occasionally, until your your cauliflower is tender and browned. (Confession: I sometimes roast for up to 35 minutes because I like very crispy cauliflower.)
Notes
Tastes amazing on its own or served with a little crumbled feta or goat cheese.
