If you’ve hung around my blog enough, you may have tried my Keto Crusted Buttery Chicken Casserole. It’s one of my most popular recipes, and I’ve received lots of feedback about it over the years. Although most people who try it enjoy it, quite a few people have told me that they wish it had a vegetable in it to make it a healthier casserole.

I’m here to deliver with this NEW Keto Buttered Chicken Casserole recipe! It’s a new-and-improved version of the original with added broccoli and cheddar cheese, plus an overall improved flavor and texture thanks to some recipe tweaks. While I like both versions, I think this one is the winner!

How to Make Keto Buttered Chicken Casserole {Quick Overview}

This is just a quick overview of some of the steps involved in making the keto chicken casserole. For the recipe in detail, including exact measurements used at each step, scroll to the recipe card at the end of the post.

First, finely crush half of the pork rinds, combine with butter, and bake on a baking sheet.

Then, into a skillet over medium-high heat, add butter and saute garlic. Then stir in coconut flour. Then add chicken broth, almond milk, Worcestershire sauce, salt, and pepper and cook until slightly thickened. Remove skillet from heat.

Add cheddar cheese, remaining broth, cooked chicken, and cooked broccoli. Stir to combine.

Add baked pork rinds to the bottom of the pan.

Then add chicken-broccoli mixture and top with remaining cheddar. Finely crush the remaining pork rinds and mix them with butter, then add those to the top of the casserole.

Bake until topping is golden brown.

Ingredients

  • 6 oz pork rinds divided
  • 9 tbsp butter divided
  • 1 clove garlic minced
  • 2 tbsp coconut flour
  • 1/2 cup plus 1/3 cup chicken broth divided
  • 1/2 cup almond milk
  • 1 tsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp pepper
  • 1 cup shredded Cheddar cheese divided
  • 2 cups chopped, cooked chicken breast
  • 2 cups blanched broccoli florets see notes for quick blanching tips

Instructions

  • Preheat oven to 350 F.
  • Finely crush 3 oz pork rinds and stir in 3 tbsp of melted butter. Place mixture on a baking sheet and bake at 350 F for 10 minutes. Remove from oven and set aside.
  • Melt 3 tablespoons butter in a large skillet over medium-high heat. Stir in garlic and cook for 1 minute. Then stir in coconut flour and cook for 1 minute.
  • Stir 1/2 cup chicken broth, almond milk, Worcestershire sauce, salt and pepper into mixture in skillet. Cook for 3-4 minutes or until slightly thickened. Remove from heat.
  • Stir in 3/4 cup shredded Cheddar cheese, remaining 1/3 cup broth, chopped chicken, and broccoli florets. Stir well to combine.
  • Transfer baked pork rind mixture to an 8x8" baking dish to evenly cover the bottom of the dish. Top with chicken mixture to evenly cover.
  • Finely crush remaining 3 ounces pork rinds and stir in remaining 3 tbsp melted butter and remaining 1/4 cup shredded Cheddar cheese. Top chicken mixture evenly with crushed pork rind mixture.
  • Bake at 350 F for 30 minutes or until topping is golden brown.

Notes

To quickly blanch broccoli florets, place them in a bowl with 1/2" water in the bottom. Cover bowl with a paper towel and microwave on HIGH for 2 minutes. Broccoli is cooked when it is easily pierced with a fork. Drain water and use in recipe as directed.
