I’m so excited to bring you this mouthwatering Keto Teriyaki Casserole recipe that can be enjoyed with chicken or beef depending on what sounds good to you, what best fits into your macros, and/or what’s in your kitchen right now! The chicken version is a little leaner, whereas the beef version is a bit heavier in fat. Both are loaded with flavor!

How to Make This Keto Teriyaki Casserole with Chicken or Beef
This is just a quick overview of how to make low carb teriyaki casserole. For the ingredients and recipe in detail, scroll to the recipe card at the end of the post.
Cook the cauliflower rice and red onion…
… and then spread it onto the bottom of an 8″x8″ casserole dish.
Then, cook the ground chicken or ground beef; next, add the broccoli, snow peas, and edamame and cook until the vegetables have softened.
TIP: As you can see in the photo below, you do not need to thaw the frozen edamame. It will quickly defrost and cook through in the pan.
Next, combine soy sauce, chicken broth, ginger paste, garlic paste, Swerve Brown, and sesame oil in a measuring cup.
TIP: Find garlic and ginger paste in the produce section of the grocery store. It makes prep super fast and easy!
Pour mixture over chicken/beef and vegetables and cook until the mixture has thickened slightly.
Stir in green onions, then transfer mixture to the casserole dish on top of the cauliflower rice. Sprinkle with sesame seeds and then bake.
Once the mixture has cooked, remove from oven and cool slightly before serving. Enjoy!
Is Edamame Keto?
Yes, edamame is keto. Although it’s a legume, it’s packed with protein and fiber and is relatively low in carbs, making it a good choice for keto. It’s not the lowest-carb choice you can make, but eaten in moderation, it’s perfectly fine.
What is edamame, you ask? Edamame is the name for immature soybeans in the pod. Edamame beans (used in this recipe) are the soybeans that you find in the pod.
Is Soy Sauce Keto?
Yes, soy sauce is keto. It’s best to use tamari soy sauce, which is the wheat-free/gluten-free version of soy sauce. According to SAN-J, a popular brand, tamari has a “richer, milder, [and] more complex taste” than you would find in traditional soy sauce. It contains 1g net carbs per tablespoon.
How to Make a Non-Keto Version of this Casserole
It’s SO easy to make a keto version of this for yourself and a non-keto version for others in the household. Here’s how to make the non-keto version:
- Omit the cauliflower rice and instead cook 1 cup (dry measurement) white rice according to package directions.
- Replace step 3 with the following: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add red onion and cook until onion begins to brown slightly. Then turn the heat down to medium, add the cooked white rice, and stir until mixture is combined and rice has warmed (about 2 minutes).

Keto Teriyaki Chicken Casserole {Chicken or Beef}
Ingredients
- 2 tbsp olive oil divided
- 1/4 cup diced red onion
- 16 oz cauliflower rice
- 1 lb ground chicken OR 80/20 ground beef
- 1 cup broccoli florets
- 1 cup snow peas cut in half
- 1/4 cup frozen edamame beans
- 1/2 cup tamari soy sauce or soy sauce
- 1/2 cup chicken broth
- 1 tsp ginger paste
- 1 tsp garlic paste
- 3 tbsp Swerve Brown or another keto-friendly brown sugar substitute
- 1 tsp sesame oil
- 1/4 cup chopped green onions
- 1 tbsp sesame seeds
Instructions
- Preheat oven to 400°.
- Spray an 8- x 8-inch baking dish with cooking spray. Set aside.
- Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add red onion and cauliflower rice. Cook for 6 minutes or until cauliflower is tender.
- Transfer mixture to prepared 8- x 8-inch dish. Pressing mixture lightly to flatten. Set aside and keep warm.
- Add remaining 1 tbsp olive oil to pan. Add ground chicken and cook for 5-6 minutes or until chicken (or beef) is cooked through. Add broccoli, snow peas, and edamame to skillet. Cook for 2-3 minutes to soften vegetables.
- Meanwhile, combine tamari soy sauce, chicken broth, ginger paste, garlic paste, Swerve Brown, and sesame oil in a measuring cup. Pour mixture over chicken (or beef) and vegetables. Cook, stirring constantly for 2-3 minutes or until mixture thickens slightly.
- Stir green onions into mixture. Transfer chicken (or beef) and vegetable mixture to top cauliflower rice in dish. Sprinkle top with sesame seeds.
- Bake at 400° for 10 minutes or until heated through.
