Ingredients Needed to Make Au Gratin Cauliflower Recipe

  • Frozen cauliflower florets
  • Cream cheese
  • Heavy whipping cream
  • Unsalted butter
  • Garlic powder
  • Dried dill
  • Salt and pepper
  • Shredded Italian cheese blend
  • Bacon
  • Fresh chives

🧀 CHEESE NOTE: I used an Italian cheese blend in this recipe, but you can use any cheese you’d like, including:

  • Gruyère
  • Cheddar
  • Gouda
  • Monterey jack
  • Parmesan

Or really anything you’d like! Keep in mind that freshly shredded will melt better than pre-shredded, but you can use pre-shredded for convenience.

How to Make Cauliflower Au Gratin {Quick Overview}

You’ll start by cooking the cauliflower per bag instructions, then drain off water and set aside.

To a bowl, add cream cheese chunks, heavy whipping cream, butter, garlic powder, dried dill, and salt and pepper to taste. Mix to combine.

Add cooked and drained cauliflower to the cream cheese mixture, toss to combine, then place into a casserole dish.

Sprinkle top evenly with shredded cheese and cooked bacon pieces.

Place in oven and bake for 8-10 minutes, or until the cheese is melted and browned.

Ingredients

  • 12 oz bag frozen cauliflower florets
  • 6 oz cream cheese cut into small chunks
  • 1/3 cup heavy whipping cream
  • 3 tbsp unsalted butter melted
  • 1/4 tsp garlic powder
  • 1/2 tsp dried dill
  • salt and pepper to taste
  • 1 cup shredded Italian cheese blend
  • 4 strips bacon cooked and crumbled
  • 1 tbsp fresh chives chopped

Instructions

  • Place top oven rack in the center position and preheat oven to 400 F.
  • Cook frozen cauliflower according to package instructions. Drain off excess water, then set aside.
  • In a large bowl, combine cream cheese, heavy whipping cream, butter, garlic powder, dried dill, and salt and pepper to taste.
  • Add cauliflower to cream cheese mixture and toss to combine.
  • Transfer to an oven-safe casserole dish and top with shredded cheese blend and crumbled bacon. Place in the preheated oven and roast until the cheese is melted and browned on top, about 8-10 minutes.
  • Remove from oven and serve immediately topped with fresh chives.
