- Yellow onion
- Garlic
- Eggs
- Shredded mozzarella cheese
- Shredded cheddar cheese
- Grated Parmesan cheese
- Pork rinds or Parmesan cheese crisps
- Butter
- Salt

How to Make Keto Garlic Parmesan Zucchini Casserole {Quick Overview}
This is just a quick overview of some of the steps involved in making the low carb zucchini casserole. For the recipe in detail, including exact measurements used at each step, scroll to the recipe card at the end of the post.
To start this casserole, you’ll need to remove some of the water from the shredded zucchini.
⭐ If you don’t want to shred your own zucchini, you can use fresh spiralized zucchini found in the produce section. Just make sure to chop it into shorter pieces so you’re not using long spirals.
Start by adding half of the zucchini to the middle of a cheesecloth or cotton kitchen towel. (Photo 1)
Twist the cloth or towel to make a pouch. (Photo 2)
Over a bowl or a sink, squeeze the pouch as much as possible to extract excess water. (Photo 3)
Add the zucchini to a dry bowl, then repeat the process for the other half of the zucchini. Add the remaining zucchini to the bowl. (Photo 4)
To the zucchini, add onion, garlic, eggs, mozzarella cheese, cheddar cheese, and 1/2 cup Parmesan cheese. (Photo 5)
Add mixture to a prepared baking dish and bake per the recipe card at the end of the post. (Photo 6)
While the dish is baking, melt butter. In a small bowl, combine melted butter, pork rinds, and remaining Parmesan cheese.
Remove dish from oven after 20 minutes. (Photo 7)
Add butter mixture on top and return to oven for 5-8 minutes, until the topping is browned and crispy. (Photo 8)
Serve. Season with salt and pepper to taste and enjoy!

Keto Zucchini Casserole
Ingredients
- 4 cups shredded zucchini about 4 medium zucchini
- 1/4 tsp salt
- 1/2 cup diced yellow onion
- 2 tbsp minced garlic
- 2 eggs beaten
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 3/4 cup grated Parmesan cheese divided
- 1/2 cup crushed pork rinds or Parmesan cheese crisps
- 3 tbsp butter
Instructions
- Preheat oven to 375 F and prepare an 8” x 8” baking dish by spraying it with non-stick cooking spray.
- Place half the shredded zucchini in the center of a clean cheesecloth or cotton kitchen towel. Twist the cloth or towel to make a zucchini “pouch.” Over the sink, squeeze the pouch to extract as much water as possible from the shredded zucchini.
- Add the drained zucchini to a bowl, then repeat the process for the second half of the zucchini.
- To the zucchini, add onion, garlic, eggs, mozzarella cheese, cheddar cheese, and 1/2 cup Parmesan cheese. Mix well.
- Add mixture to prepared baking dish and bake for 20 minutes.
- While the dish is baking, melt butter. To a small bowl, add pork rinds, remaining 1/4 cup Parmesan cheese, and melted butter. Stir to combine.
- After 20 minutes, remove dish from oven and sprinkle buttered mixture on top. Then return to the oven for an additional 5-8 minutes, or until topping is browned and crispy.
- Serve and season with salt and pepper to taste.

4 cups diced yellow squash and 4 cups diced zucchini ..just 2 TBSP Garlic….No onions..No Butter No Pork rinds or Crisps…Added cooked diced chicken.All other ingredients included.Cooked about 1 1/2hrs
If you never try another zucchini recipe, make this one!! I was shocked at how delicious this was. I’m the only one in the family who will eat Keto and normally that makes me me sad. Not this time. It meant more for me. (Isn’t that awful?) It’s good hot or cold. reheats like a dream and tastes the same three days after you make it as the first time. This is a winner for sure.
