- Swerve Confectioners
- Baking powder
- Unsweetened almond milk (plain or vanilla – I prefer vanilla!)
How to Make a Lemon Poppy Seed Keto Mug Muffin Cake {Quick Overview}
This is just a quick overview of some of the steps involved in making the lemon poppy seed keto mug muffin. For the recipe in detail, including exact measurements used at each step, scroll to the recipe card at the end of the post.
Melt coconut oil in a microwave-safe mug or ramekin. Then add heavy whipping cream, lemon extract, and the egg.
In a small bowl, combine all dry ingredients. Then add the dry ingredients to the wet ingredients.
Microwave on high for 50-90 seconds, starting to check the low carb mug muffin at 50 seconds to ensure it’s not overcooked.
When finished, put a fork in the mug cake and carefully lift it up and flip it over. If the bottom isn’t fully cooked yet (this will depend on your microwave), cook it for another few seconds.
Then make Easy Glaze Icing and drizzle on top.
TIP: Your mug cake can be enjoyed in the mug, fully intact on a plate or bowl, or cut in half on a plate or bowl. Enjoy!

Keto Lemon Poppy Seed Muffin with Chia Seeds
You may have noticed that I’ve referred to this as a “Keto Lemon Poppy Seed Muffin” a few times, but the recipe itself uses chia seeds.
The reason is this: the flavor – and the look! – is pretty much the same no matter if you use poppy seeds or chia seeds, but I prefer to use chia seeds because they expand slightly in the mixture (they have the ability to absorb 10-12x their weight in water) and make for a moister muffin. But if you have poppy seeds on hand, feel free to use them!
What to Serve with a Low Carb Mug Muffin
You can enjoy this muffin as-is, or you can add some butter or coconut oil to boost the fat content. (I personally love it with some melted virgin coconut oil. Virgin coconut oil has a sweet, light coconut flavor compared to refined coconut oil, which is flavorless.)

- 1 tsp coconut oil melted

- 1/8 tsp lemon extract
- 1 large egg
- 1 tbsp coconut flour
- 1 tsp chia seeds
- 1 1/2 tbsp Swerve Confectioners
- 1/8 tsp baking powder
Glaze Icing
- 1 1/2 tbsp Swerve Confectioners
- 1 tsp unsweetened almond milk
Instructions
- Melt coconut oil in a microwave-safe mug or ramekin. Then add heavy whipping cream, lemon extract, and the egg. Whisk until yolk is incorporated and mixture is well-combined.
- In a small bowl, combine coconut flour, chia seeds, erythritol, and baking powder. Mix thoroughly to combine.
- Add dry ingredients to the mug (or ramekin), then mix thoroughly until well-combined.
- Place in the microwave for 50 to 90 seconds on high, being careful not to overcook. Check at 50 seconds and again at 10-15 second increments to ensure you remove it at the right time.
- When finished, put a fork in the mug cake and carefully lift it up and flip it over. If the bottom isn’t fully cooked yet (this will depend on your microwave), cook it for another few seconds.
- Make Glaze Icing and drizzle on top.
