- English cucumbers: I prefer to use English cucumbers in this recipe for their flavor and the fact that they don’t need to be peeled or deseeded (super convenient!). If you use regular cucumbers instead, you will need to peel and deseed them because the peels add a bitter flavor.
- Cooked chicken: You can use rotisserie chicken, canned chicken, or baked chicken.
- Bacon: I usually use regular bacon, but turkey bacon works well too.
- Ranch dressing: You can use storebought or this homemade ranch dressing recipe (omit the added bacon).
- Salt and pepper
- Dried dill or fresh dill: Optional, but adds an extra layer of flavor!

Chicken Cucumber Salad
Ingredients
- 3 cups diced English cucumbers
- 2 cups cubed cooked chicken rotisserie, canned, or baked
- 8 slices bacon cooked and crumbled
- 1/2 cup ranch dressing see notes
- salt and pepper to taste
- 1 tsp dried dill or 1 tbsp chopped fresh dill optional
Instructions
- To a large bowl, add all ingredients and mix.

- If you would like to make homemade ranch dressing, you can use this recipe (with or without the added bacon).
