Preheat oven to 450°F and chop cauliflower into florets. (Photo 1)

Into a large bowl, add cauliflower. (Photo 2) Mix together the cauliflower florets, olive oil, garlic powder, salt, and pepper until the cauliflower is evenly coated. (Photo 3)

Spread the cauliflower out in a single layer on a non-stick baking sheet like this one. If needed, use two sheets. (Photo 4)

Roast for 20 minutes, or until the cauliflower is tender and golden brown, tossing the cauliflower halfway through. (Photo 5)

Remove from oven, sprinkle on parmesan cheese*, and bake for another 3-5 minutes until parmesan is melted and beginning to brown.

*TIP: Rather than concentrating the parmesan cheese only on the florets, I like to sprinkle some directly onto the baking sheet as well. This is a personal preference, but I love the way the cheese crisps up on the baking sheet!

Remove from oven and enjoy!

Is Cauliflower Keto-Friendly?

Cauliflower is keto-friendly when it is used in low carb and keto recipes. You must avoid recipes that are made to give the impression of being low carb, because they combine cauliflower with high carb flour ingredients. For example, many “cauliflower pizza crusts” are made by combining a high carb flour with the cauliflower. The packaging leads consumers to believe that it is low carb and keto-friendly, however, due to the high net carb count, it is not.

Cauliflower is keto-friendly as long as you only use low carb recipes when you eat it.
