Have you ever put a peppermint candy in your coffee? Pre-keto, my guy and I used to love doing this around the holidays. Put a peppermint candy (or two) at the bottom of a cup, add hot coffee, and enjoy the infusion of peppermint flavor.
I remember being at his family’s house for Christmas one year when his brother took note of this, and then everyone was doing it. We went through a lot of peppermint candies that year!
We were talking about this the other day and thought… hmm, can we make a keto version of this? Of course we can! 😉 After experimenting with a few versions, we came up with these easy Peppermint Coffee Flavor Shots, each with 16g healthy fats.
All you have to do is:
- Sweeten hot coffee to your desired sweetness
- Pop in one of these flavor shots and let it melt
- Add some heavy whipping cream or unsweetened almond or coconut milk to taste
Fun, right?
Each flavor shot packs a peppermint punch and coconut oil and MCTs. It’s basically a peppermint fat bomb for your coffee!
Ingredients Needed for Keto Peppermint Flavor Shots
MCT Oil
This adds nutritious and energizing MCTs to the flavor shots. Use coupon code FORGETSUGAR20 at checkout to get 20% off your entire order. (FYI, it’s cheaper to buy Perfect Keto products from their site than from Amazon!)
- Coconut oil
- Peppermint extract — I used McCormick’s
Fat Bomb Molds
These fat bomb molds contain 24 slots, each of which hold just about 1 tbsp + 1 tsp. (You can also use them to bake keto treats!)
How to Make Keto Peppermint Flavor Shots
In a saucepan over low heat, melt coconut oil. Turn off the heat, then add MCT oil and peppermint extract and mix thoroughly to combine. (Mixing thoroughly is important… you want the peppermint extract to be evenly distributed.)
Important note: If you don’t use the molds I recommend, follow the guideline of 1/2 tsp peppermint extract per cup of coffee for a strong peppermint flavor (less if you want a milder peppermint flavor).
Place your molds on top of a cutting board or cookie sheet prior to filling it. Then, very carefully add your mixture to the molds. If you use the molds I used, I found it easiest to measure out 1 tbsp of the mixture into each mold and then follow it up with 1 tsp of the mixture into each mold.
Carefully move your filled molds to the freezer and freeze for a minimum of 1 1/2 hours. This is what you get when they’re frozen:
Pop them out and store them in the freezer in a freezer-safe bag or plastic container until they’re ready to be used.
How to Use Keto Peppermint Flavor Shots
Sweeten a 6 oz. cup of hot coffee to your desired sweetness. (Can we talk about how beautiful this cup of coffee looks? Yep, coffee is definitely beautiful!)
Add in a peppermint flavor shot. (Can we also talk about how the flavor shot kind of looks like an egg in the photo below thanks to a bit of coffee on top? I guess it knew it was going to end up in a keto-friendly recipe…)
Once the flavor shot is fully melted, add heavy whipping cream, or unsweetened almond or coconut milk, to your desired flavor. I’ve found that adding 1/4 cup coconut milk (from a carton) makes the flavor perfect, but do what works for you!
Drink and enjoy! Each flavor shot contains 16g of fat… a perfect way to start your keto day!
You may also want to give these flavor shots a try in my keto hot chocolate recipe. Skip the butter and use one of these instead!
