Raise your hand if you love EASY meals! 🙋 After a long day, the last thing most people want to do is make dinner, and it’s precisely that problem that puts a lot of people in the “good until dinner” camp. You know what I’m talking about: it’s when you stick to your diet all day and then blow it at dinner, mere hours before bed, because you’re tired and grumpy, and ordering pizza sounds like a much better idea than spending time in the kitchen making something healthy.

I think sheet pan meals are a GREAT solution to that problem, and they’re a solution that I often employ myself. I love being able to throw a few healthy ingredients (a protein, a veggie or two, and some healthy fat) onto a sheet pan and let it bake away while I’m busy around the house.

Why You’ll Love This Keto Sheet Pan Recipe

  • It uses just a few staple ingredients, many of which you probably already have on hand. No fancy ingredients here.
  • You can control the flavor. The salt, pepper, garlic powder, and onion powder are to taste, so season it just how you like it. Plus, you can use butter or extra-virgin olive oil.
  • Chicken thighs are bursting with flavor. Sorry, chicken breasts, you can’t hold a candle to the flavor of a roasted chicken thigh!
  • Roasted radishes are a wonderful substitute for potatoes on keto. I’m not saying you’re going to be fooled into thinking you’re eating a potato, but they have a similar mouth-feel and heartiness without all the carbs.

What is the Difference Between a Cookie Sheet and a Sheet Pan?

A cookie sheet only has one raised edge, allowing cookies to slide off easily. Sheet pans, in contrast, have four raised edges. You definitely do not want to use a cookie sheet for this recipe because the oil will drip off into your oven!
