A cookie sheet only has one raised edge, allowing cookies to slide off easily. Sheet pans, in contrast, have four raised edges. You definitely do not want to use a cookie sheet for this recipe because the oil will drip off into your oven!

Keto Sheet Pan Chicken Thighs with Roasted Radishes
Ingredients
Radishes
- 1 1/2 lbs radishes trimmed and halved
- 2 tbsp extra-virgin olive oil or melted butter
- To taste: salt pepper, onion powder, garlic powder, and Italian seasoning
Chicken Thighs
- 1 1/2 lbs boneless skinless chicken thighs
- 3 tbsp extra-virgin olive oil or melted butter
- To taste: salt pepper, onion powder, garlic powder, and Italian seasoning
Instructions
- Line a large rimmed baking sheet with foil or a silicone baking mat.
- Place the baking sheet in the oven and turn the oven temperature to 425° F. (You will be adding your radishes to a hot baking sheet for better baking.)
- While the oven is preheating, place radishes, oil or butter, and seasonings in a large bowl. Toss to coat.
- When the oven is preheated, carefully remove the hot baking sheet using an oven mitt. Add the radishes in a single layer to the sheet and bake for 10 minutes while preparing the chicken.
- To prepare the chicken, place chicken, oil or butter, and seasonings in a large bowl. Toss to coat.
- After the radishes have baked for 10 minutes, carefully remove the sheet from the oven, stir radishes, and add the chicken thighs in a single layer.
- Bake another 20-25 minutes until the chicken is fully cooked (internal temperature of the chicken reaches 165° F). Let the chicken rest for 5-10 minutes before serving.
