- Fresh raw Brussels sprouts
- Italian seasoning

🍽 INGREDIENT TIP: If possible, buy whole Brussels sprouts and halve them yourself rather than pre-halved Brussels sprouts. I find the pre-halved sprouts aren’t as fresh and don’t taste as good.

How to Make Keto Brussels Sprouts {Quick Overview}
This is just a quick overview of some of the steps involved in making the low carb Brussel sprout recipe. For the recipe in detail, including exact measurements used at each step, scroll to the recipe card at the end of the post.
Preheat oven to temperature listed on recipe card (at the end of the post).
Prepare Brussels sprouts, making sure to pat them dry to remove any remaining moisture. Add prepared Brussels sprouts to a large bowl.
In a small bowl, prepare sauce with all remaining ingredients except for parmesan cheese.
Add sauce to sprouts and toss to coat, making sure everything is mixed and coated.
Add Parmesan cheese and toss one more time.

Place Brussels sprouts in a single layer on a large, rimmed non-stick baking sheet and place in oven.
After 15 minutes, give it a toss to ensure every sprout is getting its fair share of the crisp love. Scrape any Parmesan cheese from the bottom of the pan.
At the 20-minute mark, do another scrape and toss for good measure, and if you love them extra crispy, put them back in the oven for 5 more minutes – watch closely so they don’t crisp too much!
Your goal is fairly crispy Brussels sprouts without burning the Parmesan. Once they’ve reached that point, serve and enjoy!

- For epic-crisp sprouts, give them a head start! Bake them alone for 10 minutes before adding the cheese.

Keto Roasted Brussels Sprouts
Ingredients
- 1 lb fresh raw Brussels sprouts trimmed and halved
- 1 tsp Italian seasoning
- 2 cloves garlic minced
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 tbsp olive oil
- 1/2 cup shredded or grated parmesan cheese
Instructions
- Preheat oven to 400 F.
- Prepare Brussels sprouts, making sure to pat them dry to remove any remaining moisture. Add prepared Brussels sprouts to a large bowl.
- In a small bowl, prepare sauce with all remaining ingredients except for parmesan cheese.
- Add sauce to sprouts and toss to coat, making sure everything is mixed and coated. Add Parmesan cheese and toss one more time. (See notes for alternative prep methods!)
- Place Brussels sprouts in a single layer on a large, rimmed non-stick baking sheet.
- Bake at 400 F for 15 mins, remove from oven and toss Brussels sprouts while also making sure to scrape all Parmesan cheese off the bottom of the pan.
- Return pan to oven and bake for another 5 minutes, then repeat the toss/scrape process from the previous step.
- Optionally return to the oven for another 5 minutes. Your goal is fairly crispy Brussels sprouts without burning the Parmesan.
- Serve and enjoy!
Notes
- Want the parmesan cheese to melt mostly on the Brussels sprouts rather than allowing some of the cheese to crisp on the baking sheet? Don’t toss the Parmesan with the sprouts; instead, strategically sprinkle it on by hand after you’ve added the sprouts to the baking sheet.
- Like your sprouts extra crispy? Bake them for 10 mins first before adding the parmesan cheese. This will allow you to bake the whole dish longer until you achieve the extra crispy sprouts of your dreams!
