Breakfast is made easy with this hearty and filling breakfast casserole! This is one of my go-to breakfast recipes when I’m having company over, and it’s also great for meal prep because it lasts several days in the fridge.

How to Make Sausage Breakfast Casserole {Quick Overview}

First, preheat your oven to the temperature listed on the recipe card (located at the end of the post).

Photo 1: In a mixing bowl, combine eggs, sour cream, heavy whipping cream, salt, pepper, and cheddar cheese. Using a wire whisk, thoroughly combine ingredients.

To a skillet over medium-low heat, cook pork sausage until cooked through and beginning to brown. Drain off about 75% of the fat, leaving the remainder in the skillet, and turn off the heat.

Photo 2: Using a slotted spoon, remove cooked sausage and add it to the egg mixture. Thoroughly combine.

Photo 3: Into the skillet used to cook the sausage, saute the garlic, onions, red pepper, and green pepper for 3-4 minutes over medium heat.

TIP: Want to throw in additional or different veggies? Go for it!

Pour casserole mixture into a lightly greased 9” x 13” casserole dish.

Bake the casserole dish in the oven for 40-50 minutes until a toothpick inserted into the middle comes out clean.

Ingredients
