In a mixing bowl, combine eggs, sour cream, heavy whipping cream, salt, pepper, and cheddar cheese. Using a wire whisk, thoroughly combine ingredients.
To a skillet over medium-low heat, cook pork sausage until cooked through and beginning to brown. Drain off about 75% of the fat, leaving the remainder in the skillet, and turn off the heat.
Using a slotted spoon, remove cooked sausage and add it to the egg mixture. Thoroughly combine.
Into the skillet used to cook the sausage, saute the garlic, onions, red pepper, and green pepper for 3-4 minutes over medium heat.
Add the pepper mixture to the egg mixture and thoroughly combine.
Pour casserole mixture into a lightly greased 9” x 13” casserole dish.
Bake the casserole dish in the oven for 40-50 minutes until a toothpick inserted into the middle comes out clean.
Cool for 5-10 minutes before serving.
