How to Make Keto Chicken Parmesan Casserole {Quick Overview}

This is just a quick overview of some of the steps involved in making the low carb chicken parmesan casserole. For the recipe in detail, including exact measurements used at each step, scroll to the recipe card at the end of the post.

Preheat your oven to temperature on recipe card (located at the end of the post).

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

Add Italian seasoning, marinara sauce, almond flour, and chicken. Combine and cook for 5 minutes.

Then, into a 9″ x 13″ casserole dish that has been sprayed with non-stick cooking spray, pour chicken/marinara mixture.

Next, layer on parmesan, mozzarella, and finely crushed parmesan crisps.

TIP: You can also use finely crushed pork rinds in this recipe. I used to use pork rinds, but I’ve switched to parmesan crisps for a better flavor. That said, pork rinds are the more budget-friendly option.

Bake for 25 minutes.

Once done, remove the casserole from the oven and let it cool for a few minutes before serving.

Ingredients

  • 4 cups cubed rotisserie chicken or chicken breast, cooked and cubed
  • 3/4 cup no added sugar marinara sauce
  • 1 tbsp Italian seasoning
  • 2 garlic cloves minced
  • 1 tbsp olive oil
  • 2 tbsp almond flour
  • 3/4 cup parmesan cheese grated
  • 1 1/2 cups shredded mozzarella cheese
  • 3/4 cup finely crushed parmesan crisps or pork rinds
  • Non-stick cooking spray

Instructions

  • Preheat your oven to 350 F.
  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  • Add Italian seasoning, marinara sauce, almond flour, and chicken. Combine and cook for 5 minutes.
  • Into a 9” x 13” casserole dish that has been sprayed with non-stick cooking spray, pour chicken/marinara mixture.
  • Next, layer on parmesan cheese, mozzarella cheese, and finely crushed parmesan crisps.
  • Bake for 25-30 minutes, until casserole is heated throughout and the cheese is melted.
  • Once done, remove the casserole from the oven and let it cool for a few minutes before serving.
