  • Cubed beef stew meat
  • Garlic cloves
  • Salt
  • Pepper
  • Almond flour
  • Celery stalk
  • White onion
  • Beef broth
  • Water
  • Red wine (optional)
  • Dried rosemary
  • Bay leaf
  • Carrot
  • Radishes
  • Turnips
  • Xanthan gum (to thicken the stew)

INGREDIENTS NOTE: You can use both radishes and turnips as noted in this recipe, or you use one or the other. Turnips are more potato-like, but they have more carbs than radishes. (Turnips contain 10g net carbs per 1/2 lb, whereas radishes contain 4g net carbs per 1/2 lb.)

How to Make Keto Beef Stew {Quick Overview}

Heat the olive oil in a Dutch oven or large pot. Toss in the stew meat…

… garlic, salt, pepper, and almond flour. Mix everything around so the meat gets a good coating of the flour and oil.

Turn the heat to medium and cook the meat, stirring often, until it’s nicely browned.

Next, add the celery, onion, beef broth, water, red wine (if you’re using it), dried rosemary, and a bay leaf.

Bring it to a boil, then lower the heat to a simmer and cover the pot. Let it simmer for about 55-65 minutes, until the stew gets darker and starts to thicken a bit.

Take off the lid and add the carrots, radishes, and turnips.

Let it simmer for another 25-30 minutes, or until the veggies and beef are as soft as you like.

To Make a Thicker Stew

Mix the slurry ingredients in a bowl. Slowly add the mixture to the stew, stirring well after each addition, until it’s the thickness you want. Use as much or as little as you need!

Ingredients

  • 3 tbsp olive oil
  • 2 lbs cubed beef stew meat
  • 2 garlic cloves crushed
  • 1 tsp salt
  • 1 tsp pepper
  • 1/4 cup almond flour
  • 1 celery stalk chopped
  • 1 medium white onion chopped
  • 4 cups beef broth
  • 2 cups water
  • 1/2 cup red wine optional
  • 1 tsp dried rosemary
  • 1 bay leaf
  • 1 large carrot peeled and cut into 1/2” rounds
  • 1/2 lb chopped radishes see notes
  • 1/2 lb chopped turnips see notes

Slurry (to thicken)

Instructions

  • To a Dutch oven or large pot, add olive oil. Then add the stew meat, garlic, salt, pepper, and flour. Toss the meat in the pot with the flour and oil to coat the meat thoroughly.
  • Turn the heat to medium and cook the meat until it’s browned, tossing it frequently.
  • Add the celery, onion, beef broth, water, red wine (optional), dried rosemary, and bay leaf. Bring the mixture to a boil, then turn it down to a simmer and cover. Simmer for 55-65 minutes until the stew has darkened and slightly thickened.
  • Uncover, add carrots, radishes, and turnips, and simmer for 25-30 minutes until carrots, radishes, turnips, and beef reach your desired softness.
  • To thicken the stew, combine the slurry ingredients in a bowl. Slowly add the mixture to the stew, stirring thoroughly between each addition, until the stew is your desired thickness. (Add as much or as little of the mixture as needed.)
