How to Make Keto Zuppa Toscana {Quick Overview}

This soup is a breeze to make! Start by cooking the sausage in your soup pot.

TIP: You can use mild or hot ground Italian sausage depending on your flavor preferences. (I don’t love a lot of heat, so I use mild.)

When it’s done, transfer it with a slotted spoon to a large bowl.

In the sausage grease, cook the bacon. Transfer the cooked bacon to a small plate.

Drain any remaining fat from the pot and add butter. Saute onions until translucent, then add garlic, red peppers, and zucchini and saute for 4 minutes.

TIP: Although butter adds a great flavor to this soup, if you would prefer to skip the butter and saute the vegetables in the sausage/bacon grease, go for it!

Add chicken broth, heavy whipping cream, salt, pepper, cooked Italian sausage, and kale.

Bring the mixture to a simmer and simmer for 5 minutes, until the kale is tender and the soup is heated through.

Remove the soup pot from the heat. Crumble the bacon and either stir it into the soup or use it to garnish individual servings. (In the photos in this post, I stirred it into the soup.)

Ingredients

  • 1 1/2 lbs ground Italian sausage
  • 6 strips bacon
  • 4 tbsp butter
  • 1 small white onion diced
  • 3 garlic cloves minced
  • 1 medium red bell pepper chopped
  • 2 small zucchini chopped
  • 6 cups chicken broth
  • 2 cups heavy whipping cream
  • 1 1/2 tsp salt
  • 1 tsp pepper
  • 3 cups kale chopped or torn into bite-sized pieces

Instructions

  • In a large soup pot, saute Italian sausage until cooked through. Remove the cooked sausage with a slotted spoon and set it aside in a large bowl.
  • In the remaining sausage grease, cook the bacon. When it’s done, set aside on a plate.
  • Drain the remaining fat out of the pot (see notes), then add butter and onions. Saute until the onions are translucent.
  • Add minced garlic, chopped red pepper, and chopped zucchini and saute for 4 minutes.
  • Add chicken broth, heavy whipping cream, salt, pepper, cooked Italian sausage, and kale. Bring the mixture to a simmer and simmer for 5 minutes, until the kale is tender and the soup is heated through.
