How to Make Keto Taco Soup {Quick Overview}

First, make sure you’ve made a batch of Keto Taco Seasoning. You’ll only use 1 1/2 servings, so you can save the rest for Keto Tacos!
Heat up a soup pot over medium heat and add in the ground beef. Break it up as it cooks, and keep stirring until it’s fully cooked and browned. Drain the extra fat.
Next, add all the remaining ingredients to the pot, except for the salt, pepper, and any extra seasonings—you’ll add those later after the soup simmers. Bring the soup to just under a boil, then let it simmer for about 10 minutes.
✨ TIP: For a less spicy soup, use 10 oz regular diced tomatoes instead of a second can of RO*TEL.
After 10 minutes, give the soup a taste and adjust the flavors to your liking by adding salt, pepper, or any other seasonings you love. If you want it a bit brothier, just add more beef broth.

Keto Taco Soup
Ingredients
- 1 1/2 lbs ground beef
- 1 1/2 cups beef broth
- 1 cup heavy whipping cream
- 2 10-oz cans RO*TEL Original Diced Tomatoes and Green Chilis, undrained see notes for a less spicy option
- 1 medium red pepper diced
- 1 1/2 servings Keto Taco Seasoning
- salt, pepper, and/or additional seasonings to taste
Toppings
- shredded cheese
- sour cream
- pork rinds
Instructions
- To a soup pot over medium heat, add ground beef. Break up the beef as it cooks, cooking it until cooked through and browned. Drain any excess fat.
- Add all remaining ingredients to the pot except for the salt, pepper, and additional seasonings (you’ll add those after the soup has simmered). Bring soup to just under a boil, then simmer for 10 minutes.
- After 10 minutes, carefully taste the soup and adjust the seasonings to your preferences by adding additional salt, pepper, and other seasonings to taste. If you prefer a brothier soup, add more beef broth.
- Serve and enjoy!
