  • It’s packed with the zesty taco flavors you know and love, but without the carbs. It’s like a deconstructed taco in a delicious soup form.

How to Make Keto Taco Soup {Quick Overview}

This is just a quick overview of some of the steps involved in making the low carb soup. For the recipe in detail, including exact measurements used at each step, scroll to the recipe card at the end of the post.

First, make sure you’ve made a batch of Keto Taco Seasoning. You’ll only use 1 1/2 servings, so you can save the rest for Keto Tacos!

Heat up a soup pot over medium heat and add in the ground beef. Break it up as it cooks, and keep stirring until it’s fully cooked and browned. Drain the extra fat.

Next, add all the remaining ingredients to the pot, except for the salt, pepper, and any extra seasonings—you’ll add those later after the soup simmers. Bring the soup to just under a boil, then let it simmer for about 10 minutes.

TIP: For a less spicy soup, use 10 oz regular diced tomatoes instead of a second can of RO*TEL.

After 10 minutes, give the soup a taste and adjust the flavors to your liking by adding salt, pepper, or any other seasonings you love. If you want it a bit brothier, just add more beef broth.

✨ This soup tastes great when paired with sour cream and shredded cheese (my personal favorite is taco shredded cheese!). Pork rinds on the side add a fun crunch too!

    After making your low carb version of this soup I cannot go back to the regular high carb version. I was shocked that even my two children loved it and didn’t even notice the difference. They want me to make it again soon!
