Instructions
To a soup pot over medium heat, add ground beef. Break up the beef as it cooks, cooking it until cooked through and browned. Drain any excess fat.
Add all remaining ingredients to the pot except for the salt, pepper, and additional seasonings (you’ll add those after the soup has simmered). Bring soup to just under a boil, then simmer for 10 minutes.
After 10 minutes, carefully taste the soup and adjust the seasonings to your preferences by adding additional salt, pepper, and other seasonings to taste. If you prefer a brothier soup, add more beef broth.
Serve and enjoy!

For a less spicy soup, use 10 oz regular diced tomatoes instead of a second can of RO*TEL.
