First, make the dressing. To a medium-sized bowl, add red onion, mayonnaise, sour cream, Swerve, apple cider vinegar, lemon juice, salt, and pepper.

Whisk until it’s all combined:

Ingredients

  • 14 to 16 oz bag coleslaw mix see notes
  • 3 tbsp chopped red onion
  • 3/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup Swerve Confectioners or Granular or other 1:1 sugar substitute
  • 2 tbsp apple cider vinegar
  • 1 tsp lemon juice
  • 1 tsp salt
  • 1/4 tsp pepper

Instructions

  • In a mixing bowl, combine red onion, mayonnaise, sour cream, Swerve, apple cider vinegar, lemon juice, salt, and pepper.
  • Add coleslaw mix to the mixing bowl and thoroughly combine.
  • Cover and refrigerate for 1-2 hours before serving.

Notes

  • You can also use a small head of cabbage (shredded), one carrot (shredded), and about 1/2 cup shredded red cabbage. For the most nutritional accuracy, make sure the amount that you use weighs between 14 and 16 oz.
