  • They’re conveniently made in the air fryer. You can also make these in the oven, but the air fryer delivers a better texture.

Ingredients Needed to Make This Zucchini Pizza Bites Recipe

🍕 INGREDIENTS NOTES:

  • You can top these mini pizzas with any of your favorite pizza toppings. Feel free to get creative!
  • I highly recommend shredding your mozzarella cheese by hand for maximum melting (pre-shredded cheese contains anti-caking agents that make it harder for cheese to melt fully). Here’s the grater I use.
  • If you can’t find mini pepperoni, you can cut regular-sized pepperoni into quarters.

How to Make Zucchini Pizza Bites {Quick Overview}

This is just a quick overview of some of the steps involved in making the air fryer zucchini recipe. For the recipe in detail, including exact measurements used at each step, scroll to the recipe card at the end of the post.

Gather your ingredients, making sure you’ve sliced your zucchini into 1/4″ slices. I leave the peel on for its nutrients, but you can peel your zucchini if you’d prefer.

Place zucchini slices into the air fryer in a single layer (you’ll likely need to work in batches). Cook for 5 minutes.

Sprinkle with salt and pepper to taste…

then add marinara sauce.

Add Italian seasoning and mozzarella cheese. If you’re adding pepperoni, you can add it at this step as well.

🍕 I like to add my cheese kind of sloppily over the zucchini slices because I love having the melted cheese draped all over the edges. You’re welcome to make your mini pizzas look a little cleaner!

Cook again until the cheese has melted fully.

As well as cheese and pepperoni:

Remove your mini pizzas and place them on a plate. Repeat the process until you’ve made all of the slices, or until you’ve run out of toppings.

Ingredients

  • 1 medium zucchini sliced into 1/4” slices
  • 1/2 cup marinara sauce
  • 1 cup shredded mozzarella cheese or more if desired; shred by hand for best results
  • 1/2 cup mini pepperoni slices or more if desired
  • Non-stick cooking spray
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1 tsp Italian seasoning

Instructions

  • Place zucchini slices in a single layer in the air fryer (you will need to work in batches) and lightly spray them with cooking spray. Cook for 5 minutes at 400 F.
  • Sprinkle the slices with salt and pepper to taste, then spoon about 1 tsp marinara sauce onto each slice.
  • Sprinkle Italian seasoning onto the slices to taste, then generously sprinkle with shredded mozzarella cheese. Optionally add mini pepperoni slices.
  • Cook for 5-6 minutes until cheese has melted. Remove, place the pizza bites on a plate, and repeat the process until you’ve made all of the zucchini.

A 6” medium zucchini yields approximately 24 slices
