  • You’ll use red bell peppers in this recipe instead of green to bring a little more color and flavor to mealtime. Green bell peppers serve their purpose, but you really can’t beat bright, flavorful red bell peppers!
  • These stuffed peppers skip the carb-heavy rice and use cauliflower rice instead. The key to making sure these stuffed peppers hold up as well as traditional peppers is getting as much moisture out of the cauliflower rice as possible.

  • Olive oil
  • Frozen cauliflower rice
  • Garlic
  • Yellow onion
  • 90% lean ground beef
  • Salt and pepper
  • Italian seasoning
  • Tomato sauce
  • Mozzarella cheese

How to Make Stuffed Peppers with Cauliflower Rice {Quick Overview}

Photo 1: Preheat oven to temperature on the recipe card (at the end of the post), lightly coat peppers with olive oil, and place them upside down in a baking dish or sheet pan.

Photo 2: Saute the garlic and onion in olive oil until beginning to turn fragrant, then add the drained cauliflower rice. Mix and cook until any excess moisture is removed from the cauliflower rice.

TIP: It’s important to try to get as much moisture out of the cooked cauliflower rice as possible. That will give you the best final texture!

Photo 3: Add ground beef, salt, pepper, and Italian seasoning to skillet, mix, and saute until the beef is browned.

Photo 4: Remove skillet from heat and mix in tomato sauce and 3/4 cup Mozzarella cheese.

Photo 5: Flip peppers over and stuff with the stuffing mixture. Sprinkle tops with remaining 3/4 cup Mozzarella cheese.

Photo 6: Return to the oven and bake for 15-20 minutes until cheese has melted and the stuffing is fully heated.

TIP: For that special extra-gooey melted cheese look, shred your Mozzarella cheese by hand. Pre-shredded cheese contains anti-caking agents that make it difficult to melt (as you can probably see in these photos!).

Ingredients

  • 3 large red bell peppers destemmed, deseeded, and membrane removed
  • 1 tbsp olive oil plus extra for baking
  • 1 cup cauliflower rice cooked, cooled, and drained
  • 2 cloves garlic minced
  • 1 small yellow onion finely chopped
  • 1 lb 90% lean ground beef
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp Italian seasoning
  • 8 oz can tomato sauce
  • 1 1/2 cups shredded Mozzarella cheese divided

Instructions

  • Preheat oven to 375 F.
  • Lightly rub the inside and outside of the peppers with olive oil and place them upside down in a baking dish or on a sheet pan.
  • Roast for 20-25 minutes, depending on how soft you like your stuffed peppers. (These should be removed from the oven and set aside when done, but move onto the filling steps while they’re roasting.)
  • Saute the garlic and onion in olive oil until beginning to turn fragrant, then add the cauliflower rice. Mix and cook until any excess moisture is removed from the cauliflower rice.
  • Add ground beef, salt, pepper, and Italian seasoning to skillet, mix, and saute until the beef is browned.
  • Remove skillet from heat and mix in tomato sauce and 3/4 cup Mozzarella cheese.
  • Flip peppers over and stuff with the stuffing mixture. Sprinkle tops with remaining 3/4 cup Mozzarella cheese.
  • Return to the oven and bake for 15-20 minutes until cheese has melted and the stuffing is fully heated.

Notes
