  • Celery stalk
  • White onion
  • Beef broth
  • Water
  • Red wine (optional)
  • Dried rosemary
  • Bay leaf
  • Carrot
  • Radishes
  • Turnips
  • Xanthan gum (to thicken the stew)

INGREDIENTS NOTE: This recipe works great with either radishes, turnips, or a mix of both, so use what you have on hand or what you prefer. Turnips give you more of that classic potato vibe, but they do come with a few extra carbs (about 10g net carbs per 1/2 pound). Radishes, on the other hand, are lighter at only 4g net carbs per 1/2 pound, and they soak up flavor beautifully when cooked.

How to Make Keto Ground Beef Stew {Quick Overview}

Heat olive oil in a Dutch oven or large pot. Add ground beef, garlic, salt, pepper, and almond flour. Break up the beef with a spatula, coating it evenly as it cooks.

Turn the heat to medium and cook until browned. Stir in celery, onion, beef broth, water, red wine (optional), rosemary, and bay leaf.

Bring to a boil, then reduce to a simmer, cover, and cook 55–65 minutes until the stew darkens and thickens slightly.

Uncover, add carrots, radishes, and turnips, and simmer another 25–30 minutes until everything is tender.

To Make a Thicker Stew

Mix the slurry ingredients in a bowl. Slowly add the mixture to the stew, stirring well after each addition, until it reaches your desired thickness. Use as much or as little of the slurry as you need.

Ingredients

  • 3 tbsp olive oil
  • 2 lbs ground beef 80/20 or 90/10
  • 2 garlic cloves crushed
  • 1 tsp salt
  • 1 tsp pepper
  • 1/4 cup almond flour
  • 1 celery stalk chopped
  • 1 medium white onion chopped
  • 4 cups beef broth
  • 2 cups water
  • 1/4 cup red wine optional
  • 1 tsp dried rosemary
  • 1 bay leaf
  • 1 large carrot peeled and cut into 1/2” rounds
  • 1/2 lb radishes chopped (see notes)
  • 1/2 lb turnips chopped (see notes)

Slurry (to thicken)

Instructions

  • To a Dutch oven or large pot, add olive oil.
  • Add the ground beef, garlic, salt, pepper, and almond flour. Using a spatula, break up the ground beef while also coating it with the garlic, salt, pepper, and almond flour.
  • Turn the heat to medium and cook the beef until it’s browned.
  • Add the celery, onion, beef broth, water, red wine (optional), dried rosemary, and bay leaf. Bring the mixture to a boil, then turn it down to a simmer and cover. Simmer for 55-65 minutes until the stew has darkened and slightly thickened.
  • Uncover, add carrots, radishes, and turnips, and simmer for 25-30 minutes until carrots, radishes, turnips, and beef reach your desired softness.
  • To thicken the stew, combine the slurry ingredients in a bowl. Slowly add the mixture to the stew, stirring thoroughly between each addition, until the stew is your desired thickness. (Add as much or as little of the mixture as needed.)
