Add the ground beef, garlic, salt, pepper, and almond flour. Using a spatula, break up the ground beef while also coating it with the garlic, salt, pepper, and almond flour.
Turn the heat to medium and cook the beef until it’s browned.
Add the celery, onion, beef broth, water, red wine (optional), dried rosemary, and bay leaf. Bring the mixture to a boil, then turn it down to a simmer and cover. Simmer for 55-65 minutes until the stew has darkened and slightly thickened.
Uncover, add carrots, radishes, and turnips, and simmer for 25-30 minutes until carrots, radishes, turnips, and beef reach your desired softness.
To thicken the stew, combine the slurry ingredients in a bowl. Slowly add the mixture to the stew, stirring thoroughly between each addition, until the stew is your desired thickness. (Add as much or as little of the mixture as needed.)

This recipe works great with either radishes, turnips, or a mix of both, so use what you have on hand or what you prefer. Turnips give you more of that classic potato vibe, but they do come with a few extra carbs (about 10g net carbs per 1/2 pound). Radishes, on the other hand, are lighter at only 4g net carbs per 1/2 pound, and they soak up flavor beautifully when cooked.
