Breakfast is made easy with this hearty and filling breakfast casserole that will remind you of both French toast and cinnamon rolls! This is one of my go-to breakfast recipes when I have company over (trust me, they won’t know it’s keto), and it’s also great for meal prep because it lasts several days in the fridge.

  • It tastes ridiculously delicious. Imagine French toast paired with a delicious crunchy brown sugar-cinnamon edge. Keto breakfasts don’t get much better than this casserole!
  • It can be mostly prepared the night before. One of the steps of this casserole asks you to soak the cubed keto bread in an egg mixture. This can be done overnight so you only have to quickly bake the casserole in the morning before you serve it fresh.
  • It’s filling. With ingredients like butter, heavy whipping cream, and eggs, this breakfast casserole definitely won’t leave you hungry!
  • It’s packed with fiber. Each serving of this breakfast casserole contains 14g of fiber! The average recommended daily intake is 25-30g a day, so eating this for breakfast will give you a great start on your daily intake.

This is just a quick overview of some of the steps involved in making the low carb breakfast casserole. For the recipe in detail, including exact measurements used at each step, scroll to the recipe card at the end of the post.

TIP: You can easily make this an overnight breakfast casserole by doing steps 1-4 the night before and proceeding with the remaining steps in the morning before breakfast (which will take about 45 minutes).

Photo 4: Pour mixture over bread and place the casserole dish in the fridge for 3-4 hours, or overnight.

Photo 5: Pull the casserole dish out of the fridge and preheat the oven. Place the dish into the preheated oven.

TIP: If you’re using a glass casserole dish, make sure the glass reaches room temperature before placing it in the oven.

TIP: Cool for 5-10 minutes before serving!

How to Prepare Bread for This Casserole

So the egg mixture can fully soak into the bread, the bread must be dried out prior to making the casserole. Here are two methods for you, depending on how much time you have available:

  • Slow dry: Lay the bread out on cooling racks (or baking sheets) and let it dry out for about four hours. Then, flip the bread over and leave it out for another four hours.
  • Fast dry: Lay the bread on baking sheets and bake for five minutes on each side at 275 F.

Instructions

  • Grease a casserole dish (I used a 9" x 13") with butter.
  • Cube prepared bread into ~1” pieces and spread evenly in the bottom of the casserole dish.
  • In a mixing bowl, mix heavy whipping cream, eggs, vanilla extract, cinnamon, Swerve Confectioners, and salt until thoroughly combined.
  • Pour egg mixture evenly over the bread in the casserole dish and refrigerate for 3-4 hours (or overnight).
  • When ready to prepare the casserole, remove the casserole from the fridge and preheat the oven to 350 F. (If you're using a glass casserole dish, make sure the glass reaches room temperature before placing it in the oven.)
  • Place the casserole dish into the preheated oven and bake for 25-30 minutes.
  • While casserole is baking, make the topping by mixing the Topping Ingredients in a bowl until thoroughly combined.
  • Remove the casserole dish from the oven and sprinkle the topping evenly over the French toast mixture.
  • Return to the oven for an additional 15-25 minutes until the topping is browned and bubbly.
  • Serve plain or topped with dusted Swerve Confectioners, keto maple syrup, or keto whipped cream.

    We tried this recipe and liked it.
    The texture was great and it made enough for a few breakfasts in a row!

    There are a couple of things that might give me pause before making it again:
    1. It requires quite a bit of babying, considering it’s a breakfast recipe. The instructions say it must be chilled in the fridge for 3-4 hours or overnight. Keep that in mind if you were wanting something to eat the same day. It won’t happen.

    2. It’s very rich. I cut the sugar back by a 1/4 cup but it was still too strong and had an unpleasant aftertaste. I could try cutting it back even more, though.

    I could see myself making this again at some point, but the fussiness would keep it from making it into a regular rotation.
