Pizza Soup
Ingredients
- 3 oz sliced pepperoni
- 1 1/2 lbs ground Italian sausage
- 1 medium onion chopped
- 1 green bell pepper deseeded and chopped
- 28 oz can diced tomatoes undrained
- 15 oz can tomato sauce
- 2 cups beef bone broth
- 2 1/2 tsp Italian seasoning
- 1 tbsp Worcestershire sauce
- 1-2 tbsp sugar substitute
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
Instructions
- Slice the pepperoni in half and add the halves to a 6-quart soup pot.
- Turn the heat to medium-high and cook, stirring occasionally, until the pepperoni starts to crisp (about 5 minutes).
- Remove the pepperoni from the pot and place on a plate. Set plate aside.
- Using the same pot, cook the sausage over medium-high heat until fully cooked (about 5 minutes).
- Add the onion and pepper to the pot. Cook, stirring occasionally, until they are crisp-tender (about 5 minutes).
- Stir in the tomatoes, tomato sauce, beef bone broth, Italian seasoning, Worchestershire sauce, and sugar substitute. Bring the mixture to a boil over medium-high heat.
- Reduce the heat to low and let it simmer for 10 minutes, uncovered, stirring occasionally.
- Serve immediately. Top each bowl with crisped pepperoni, shredded Mozzarella, and grated Parmesan.
