How to Make Pizza Soup {Quick Overview}

First, let’s crisp the pepperoni! Slice the pepperoni in half and add the pieces to a large 6-quart soup pot.

Warm the pot over medium-high heat, stirring the pepperoni now and then, until the edges turn crisp and fragrant (about 5 minutes).

Ingredients

  • 3 oz sliced pepperoni
  • 1 1/2 lbs ground Italian sausage

  • 1-2 tbsp sugar substitute
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  • Slice the pepperoni in half and add the halves to a 6-quart soup pot.
  • Turn the heat to medium-high and cook, stirring occasionally, until the pepperoni starts to crisp (about 5 minutes).
  • Remove the pepperoni from the pot and place on a plate. Set plate aside.
  • Using the same pot, cook the sausage over medium-high heat until fully cooked (about 5 minutes).
  • Add the onion and pepper to the pot. Cook, stirring occasionally, until they are crisp-tender (about 5 minutes).
  • Stir in the tomatoes, tomato sauce, beef bone broth, Italian seasoning, Worchestershire sauce, and sugar substitute. Bring the mixture to a boil over medium-high heat.
  • Reduce the heat to low and let it simmer for 10 minutes, uncovered, stirring occasionally.
  • Serve immediately. Top each bowl with crisped pepperoni, shredded Mozzarella, and grated Parmesan.

Notes

You can use regular beef broth instead of beef bone broth, but doing so will reduce the protein by 2g per serving.
