Tips for Making Keto Broccoli Cheddar Soup

🥦 Tip 1: Feel free to chop your broccoli into tiny pieces. I like larger broccoli florets in my soup, but some people prefer to chop the broccoli into smaller pieces so it’s more distributed throughout the soup. If you do this, you won’t need to cook the soup as long at Step 4 since the smaller pieces will cook faster.
🧀 Tip 2: Make sure to use freshly shredded cheddar cheese. If you use cheese that has been pre-shredded, the cheese will become clumpy in the soup (due to anti-caking agents).
🥦 Tip 3: Optionally add xanthan gum to thicken the soup. If you prefer a thick broccoli cheddar soup (like a lot of restaurants serve), stir in xanthan gum as directed in the recipe. This is a carb-free way to thicken your soup! (Note: I prefer my soup slightly on the brothy side, so these photos do not show the soup with xanthan gum added.)
🧀 Tip 4: When reheating this soup, do it slowly. Reheat “low and slow” on the stovetop, or reheat it in short bursts in the microwave, making sure to stir frequently. The cheese is prone to separation when reheating, so this process will preserve the original texture.

Keto Broccoli Cheddar Soup
Ingredients
- 4 tbsp butter
- 1 medium onion chopped
- 2 garlic cloves minced
- 1 cup heavy whipping cream
- 3 cups chicken broth
- 1 carrot finely chopped or grated
- 1/2 tsp dijon mustard
- 1/2 tsp salt or more to taste
- 1/2 tsp pepper or more to taste
- 4 cups broccoli florets
- 8 oz cheddar cheese freshly grated
- 1/3 tsp xanthan gum optional; to thicken
Instructions
- Over medium-low heat, melt butter in a pot or dutch oven. Add onion and saute for 3-5 minutes.
- Add garlic and saute for 3 additional minutes.
- Then add heavy whipping cream, chicken broth, carrot, dijon mustard, salt, and pepper, and stir to combine. Bring to a simmer for 15 minutes.
- Add broccoli and cook for 12-15 minutes until broccoli has reached your desired tenderness.
- Turn heat down to low and slowly stir in cheddar cheese until it is fully melted. If you would like to thicken the soup, sprinkle xanthan gum evenly over surface of soup and whisk until soup begins to thicken.
- Remove from heat, season with additional salt and pepper to taste, and serve.
