  • 1 lb 80/20 ground beef
  • 1 medium zucchini diced
  • 1/2 cup onion diced
  • 1/2 cup green bell pepper diced
  • 2 cloves garlic minced
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste


  • Heat the olive oil in a large skillet over medium-high heat.
  • Add the diced onion and bell pepper to the skillet and cook for 2-3 minutes, or until they are tender.
  • Add the ground beef to the skillet and cook for 5-6 minutes, or until it is browned and cooked through.
  • Add the minced garlic to the skillet and cook for 1-2 minutes, or until it is fragrant.
  • Add the diced zucchini to the skillet and cook for 2-3 minutes, or until it is tender.
  • Season the beef and zucchini mixture with salt and pepper to taste.
  • Sprinkle the shredded cheddar cheese over the top of the beef and zucchini mixture.
  • Cover the skillet and cook for 2-3 minutes, or until the cheese is melted and bubbly.
  • Serve and enjoy!
