You can’t go wrong with the classic peanut butter and chocolate combo! If you’re craving a sweet and low carb treat, you have to make this yummy recipe.

If you’re new to Buckeyes, they’re like this recipe, except the peanut butter ball isn’t fully dipped in chocolate (made to look like a Buckeye nut). But with this recipe, the chocolate isn’t held back—these PB balls are completely coated. More chocolate = more joy, right? 🙂

If you live near Walmart, I love to buy these Bake Believe Keto Chocolate Melting Wafers. If you don’t, your favorite keto chocolate chips will work too! (although melting wafers will melt a little easier)

How to Make Keto Peanut Butter Balls {Quick Overview}

This is just a quick overview of some of the steps involved in making this low carb peanut butter dessert. For the recipe in detail, including exact measurements used at each step, scroll to the recipe card at the end of the post.

In a mixing bowl, stir together peanut butter, butter, vanilla extract, and Swerve Confectioners until everything’s well mixed.

Roll the mixture into small balls (about 2 teaspoons each) and place them on a cookie sheet.

💛 TIP: If the dough feels too soft to shape, just mix in a little more Swerve Confectioners (1 tablespoon at a time) until it firms up.

Chill the balls in the fridge until they’re nice and firm—about two hours is perfect.

In a microwavable bowl, combine the chocolate and coconut oil. Microwave at 50% power in 20-second bursts, stirring each time, until the chocolate is fully melted.

💛 TIP: Be careful not to overheat the chocolate. When you stir it between bursts, give it a few stirs to distribute all of the trapped heat.

Grab a toothpick and dip the chilled peanut butter balls into the melted chocolate. Place them back on the cookie sheet as you go.

After dipping all the balls, pop them in the fridge to set the chocolate. Enjoy!

Ingredients

For Coating:

  • 3/4 cup keto-friendly chocolate melting wafers or chocolate chips
  • 3/4 tsp refined coconut oil

Instructions

  • In a mixing bowl, blend together peanut butter, butter, vanilla extract, and Swerve Confectioners until the mixture is well combined.
  • Form the peanut butter mixture into balls, using about 2 teaspoons for each, and place them on a cookie sheet. (If the dough is too soft to shape into balls, add 1 tablespoon of Swerve Confectioners at a time to the dough and remix.) Chill until firm (two hours is ideal).
  • In a microwavable bowl, combine chocolate and coconut oil. Heat in the microwave at 50% power in 20-second intervals, stirring after each interval until completely melted.
  • Using a toothpick, dip the chilled peanut butter balls into the melted chocolate mixture. Place the dipped balls back onto the cookie sheet and continue the process.
  • Once all the peanut butter balls are dipped in chocolate, refrigerate until the chocolate is set.

Notes

If possible, use melting wafers instead of chocolate chips – they melt easier and have a smoother texture.
