3/4cupketo-friendly chocolate melting wafers or chocolate chips
3/4tsprefined coconut oil
Instructions
In a mixing bowl, blend together peanut butter, butter, vanilla extract, and Swerve Confectioners until the mixture is well combined.
Form the peanut butter mixture into balls, using about 2 teaspoons for each, and place them on a cookie sheet. (If the dough is too soft to shape into balls, add 1 tablespoon of Swerve Confectioners at a time to the dough and remix.) Chill until firm (two hours is ideal).
In a microwavable bowl, combine chocolate and coconut oil. Heat in the microwave at 50% power in 20-second intervals, stirring after each interval until completely melted.
Using a toothpick, dip the chilled peanut butter balls into the melted chocolate mixture. Place the dipped balls back onto the cookie sheet and continue the process.
Once all the peanut butter balls are dipped in chocolate, refrigerate until the chocolate is set.
Notes
If possible, use melting wafers instead of chocolate chips - they melt easier and have a smoother texture.
