- Roma tomatoes

- Balsamic vinegar: Some versions of this salad use red wine vinegar for a milder flavor. If balsamic isn’t your thing, go for red wine vinegar instead.
- Italian seasoning: Or you can use fresh herbs if you have those on hand.

This salad is so easy to make! First you’ll prep your vegetables. You can cut them however you’d like – some people like them diced or chopped into approximately the same size – but here’s how I do it:
Next, make the simple dressing. This is actually my go-to salad dressing when I need something quick and flavorful!
Then toss the dressing into the veggies and give everything a good stir to coat.
You can serve the salad right away, or store it covered in the fridge for an hour to let the flavors intensify.
How to store this salad: If you have leftovers, they can be covered and stored in the fridge for 2-3 days. However, keep in mind that tomatoes can start to turn mealy if they’re in the fridge too long, so it’s best to dig into this salad ASAP.
How to Make This Salad Into a Meal
If you’d like to make this salad into a meal, cut the servings from six to three and mix it with your favorite protein (I personally love adding chopped chicken). If desired, add a bit of extra dressing or seasoning to account for the added protein.

Cucumber Tomato Salad
Ingredients
- 1 large cucumber sliced into half moons
- 6 roma tomatoes halved, then quartered, then halved
- 1/2 medium red onion sliced into half moons or thinly sliced
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tbsp Italian seasoning or 3 tbsp fresh herbs of choice
- 1 tbsp Swerve Confectioners or other sugar substitute optional
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions
- Add cucumber, tomatoes, and red onion to a large mixing bowl and lightly toss them to mix.
- In a separate small bowl, combine olive oil, balsamic vinegar, Swerve (if using), Italian seasoning, salt, and pepper. Stir well to blend.
- Drizzle the dressing over the vegetables and toss until they are evenly coated.
- Serve right away.
Notes
- For a lighter flavor, use red wine vinegar instead of balsamic vinegar
